LUBBOCK - There was no
fanfare or closing party for
Stubb's Bar-B-Q.
One day it was barbecue business as usual. The next
day, the lights were off, the door locked and the smell of
basted and blackened ribs gone. Many folks don't know
until they show up that the former West Texas mecca
for food and live music was shuttered last month amid
financial woes.
Harold Aiken, who ran Stubb's in Lubbock, said
Thursday the restaurant fell prey to high beef prices and
would have had to cater to an upscale crowd to keep its
doors open.
"Barbecue is expensive business," Aiken said. "You've
got to buy all of this meat and you really need to charge
$12 a plate just to break even. But that's not something
we wanted to do or thought we could do."
C.B. "Stubb" Stubblefield died in 1995, but the
restaurant he started in the 1960s remained popular in
the years following his death.
Over the years, patrons of Stubb's restaurants have
heard legends like Muddy Waters, Johnny Cash, Willie
Nelson and Joe Ely, before they were famous.
Fans of Stubb's ribs can still get their fix at the Austin
location, or buy the famous sauce in grocery stores from
West Texas to Portland, Ore.

It's a damn shame cause that was some of the best Bar-B-Q ever and a
real good place for music. That really is disappointing!
