I see his claimed height was 6'1" but seeing on-set pics of him being
obviously shorter than some crew members even with platform sandals,
and in films like Athena and his last film "Long Ride From Hell" where
he just looks short-statured, I just don't see it. Clearly he had a
phenomenal physique, but I've long felt his height was exaggerated.

For example - wearing what have to be at least 2" lifts.

This guy is 6'1"?

Anyone actually met him?

From IMDB:

Steve Reeves is regarded by many as the greatest bodybuilder of all time
for his legendary symmetrical physique, visionary bodybuilding
techniques, dedication and love for the sport through which he won five
bodybuilding titles between 1946 and 1950. His peak measurements were:
6'1" at 216 lbs. with 18½" arms, 52" chest, and a 29" waist, partly
depicting his creation: "The Classic Physique."

Which I'm sure is from publicity sources.

I have not met Reeves, however I have met John Grimek.

Here's a link to a pic of Reeves and Anibal Lopez:

And here's one of Grimek (here at maybe 5'7" or 5'7 1/2" - old age is
a beeyotch for shrinkage) and Lopez (5'6"):

I literally towered over Grimek at the Arnold Classic about twenty
years ago.

Likewise Reeves towers over Lopez. Now you can see the size
differenced between Grimek and Reeves as both are compared to Lopez,
right?

I'm 6'1". Based on the height difference between myself and Grimek
(listed as 5'8" in his prime) I'm going to guess that Reeves' reported
6'1" is accurate.

On the topic of height, Arnold has never been 6'2" unless he was
standing on a phone book. Again, I'm 6'1" and was taller than Arnold
(though he seemed twice as broad!) on four separate occasions - the
1989 Arnold Classic, and again in 1990-1992. By at least an inch
putting Arnold at 6' flat.
