2cups fresh spinach
1/2tsp. ginger
1/2cup coconut milk
salt and pepper to taste
1.In a skillet over medium heat, bring coconut milk and
ginger to a boil.
2.Simmer for 3-4 min.
3.Add spinach and cook for 30sec., remove and wait for
another 30seconds then serve.

This looks really good. Have you tried this recipe before? I'd like
to make it. I guess this will be a good substitute for that "Laeng"
dish.
