As far as I know, it is a Grumman Albatros. Flying magazine had an interesting
article on the Albatros several months ago. There were many dying Albatros
airframes until just a few years ago. Then, restoration fever hit and people
with a fair bit of money, time, and inclination (in that order) put a bunch
into the air. It is a fabulous aircraft, filled with history and service in
both military and civilian capacities. Now, it is just an all out cool airplane
that is a tribute to seaplanes throughout history.
By the way, Jimmy is reported to have paid over $600,000 for his restored
plane. I think it was probably worth it. Now if I could just win that
lottery.....

A good picture of a caravan can be seen at:

Pilot Parrot, messin with that mouse in Orlando
The wrinkles only go where the smiles have been...
He currently has three planes registered: A Grummon Albatross (A twin engine
flying boat seaplane), A Cessna Caravan (A single engine cargo/passenger
hauler, a favorite of island hopper airlines, FedEx and drug smugglers) and
a Cessna Citation twin jet.
Jimmy also has an "N Number" (A registration number that starts with 'N'
for US planes that you see on a plane's tail) reserved for future use:
N61JB. Maybe he's gonna buy a bigger plane?
Jimmy's first plane was a Lake Renegade, a small, single engine flying boat
(and my dream plane). He named it Lady of the Waters.
