In 'generalised' white European populations on 20th century Western
diets, supposedly adult males fart around 14.7 times a day and adult
females 12.6 times (don't those significant figures add an air of
authority and exactitude?).

Four big sets of factors:

* diet (quantity and quality, including fibrosity - some of which is
related to body mass & metabolic rate/energy output, for which see
below);

* intestinal fauna (in turn associated with diet, gut pH, original
inoculation culture, length and surface area of colon - which is in
turn associated with body weight and size, for which see below);

* gender-specific behavioral differences, especially sitting to pee
(and thus opportunity to defecate or, to put it another way, a shorter
average time of retention of stuff in the poop chute - to get an FZ
reference) vs standing to urinate (and sitting to pee means that
flatulence can be passed unnoticed in relative privacy);

* sexual dimorphism reflected in differences in gut length/body size,
gut pH, core body temperature, metabolic rate, motility or speed of
flow through large intestine, etc.

Style of eating, specifically gulping air when eating, is associated
with higher rates of belching, but probably has little or nothing to
do with flatulence.

In some sub-cultures, male farting in public is a display, indulged by
post-pubescents. Display farting by females is rare in comparison.

Do we know this to be true? Where are the statistics to back that up?

I don't buy it. Even if you discount the fact that women have an
extra orifice to flatulate from, I still don't know that women do so
significantly fewer times.
