When I give the map a little shove it moves all on its own. A harder
shove and it moves faster. Is there a way to set the speed or to see
just how fast I'm moving?

Don't think so. You can set the speed of a tour (track or placemark
playback) though. And you can tell GE to either continue scrolling
once you stop pushing, or stay put. Look under Tools/Options.

That I know. But, when I give the earth a nudge or tug and it starts
spinning under me the screen tells me my lat/lon location and elevation
as the earth moves under me but it doesn't tell me my apparent
air-speed. I'd like to know that. Am I seeing the earth as I would in a
jet at 580 mph or in a Cessna at 120 or at wind speed in my hot air
balloon or am I really zipping along with Ed Conrad in my UFO?
