Joet,

I presume they were made by someone else because that behaviour is
selected at the authoring stage.

There is a program called DVDShrink (do not let anybody charge you for
this Freeware) which will allow you to re-author each DVD without menus,
replays etc. You do not have to shrink the content even though the program
was primarily designed to do that.
