Cows first in line at the feed trough may be getting all the
good stuff, according to researchers at Montana State
University.

"Without some constraints, there is tremendous variation in
the amount of liquid supplement cows in a herd get," says
Jan Bowman of MSU's Department of Animal and Range
Sciences. "Our average consumption as measured by how
much supplement disappeared came out right where
companies say it should -- at two pounds per day.
However, some cows got no supplement and other cows
got as much as 18 pounds of supplement."

Liquid supplements are about the thickness of molasses and
don't freeze solid in winter. They are popular in Montana
because they save the labor otherwise needed to feed
supplements.

Comparing feed delivery systems, the researchers found that
computer-controlled tanks seem to be best at evening-out
supplement intake, but they increase the number of animals
that fail to consume the recommended amount. Variation with
this type of tank ranged from zero to five pounds, with the
average consumption being two pounds.

The USDA is seeking public comment on potential regulation
changes to improve, control and limit the spread of scrapie,
a serious neurological disease of sheep and goats.

Current APHIS regulations only apply to flock owners who
wish to move sheep interstate. Intrastate movement of
animals from infected flocks is not restricted and poses a
risk of transmitting scrapie to other animals within a state.
These other animals could then spread the disease
interstate.

No matter what the enclosure or how strong the fence, there's
always an animal or two in every flock or herd or pen of
livestock that's going to find a way out. Call them Houdinis, or
call them some expletive, but please don't call them heroes.

That's what some folks called a pair of pigs in England who
made a daring escape from an abattoir near London. An
abbatoir is a slaughterhouse or "knacker's yard" as the Brits
call it, where pigs, cattle, sheep and other livestock are
prepared for the meat market.

The "heroic" pigs squeezed under a fence, swam across a
river and took refuge in a wooded area west of London. Local
authorities were notified, a search was organized and the
tabloid press caught wind of the event. Television helicopters
with live coverage beaming worldwide joined the pursuit.

As the porkers evaded capture day after day, their fame grew.
The tabloids called them Butch Cassidy and Sundance Pig
and the public grew enamored of the ruddy-colored
Tamworths. The owner started receiving offers of sanctuary
for the pigs and the tabloids began a bidding war over who
would purchase the porcine pair and their "exclusive"
interview.

By the time they were captured, after 10 days on the lam, the
pigs had become folk heroes to animal lovers throughout
Britain. The Vegetarian Society was predicting a change in
the nation's eating habits and newspaper pundits were
applauding the virtues of pigs.

In the Daily Mail, which eventually paid more than $12,000 for
Butch Cassidy and Sundance Pig, columnist Elspeth Barker
wrote: "Honor the pig. The pig is a positive compendium of
benefits to mankind."

Truth is, escapes of this kind are not uncommon. Livestock
are always getting out, breaking loose, going on a tear or just
plain disappearing. I've heard stories of runaway ostriches,
bulls, boars, buffalo and even reindeer. A friend in Kansas
had his pickup truck gored by a renegade longhorn as he
drove through a small town. The bull extracted its horns from
the driver's side door, shook its head and trotted off down the
street.

Many livestock runaways end tragically. The animal gets hit
by a vehicle, wanders into trouble or slowly starves to death.
Slaughterhouses are merciful compared to many demises.

Equally tragic is the impact on the owner, who incurs a
financial loss with each animal that is bred, fed and penned,
but never marketed. There aren't enough tabloid newspapers
to buy up all the loose pigs, let alone the cattle and sheep and
goats that get away. Instead, it's usually a sheriff threatening
a fine that shows up at the owner's door.

Several Western U.S. states still have open range laws giving
livestock the right-of-way along state highways and county
roads. Livestock owners are not obliged to keep their animals
penned and a driver who runs into a cow may be liable for
damages.

But in the cities and suburbs vehicles own the right-of-way
and a loose animal is both a nuisance and a danger. Keeping
animals in their proper place is critical to a smoothly
functioning society.

This explains why two loose pigs could gain such notoriety in
Britain. Farm animals are such a novelty that bobbies will go to
great lengths to capture them and TV stations will send
cameras out to film them and the tabloid press will pay great
sums of money to listen to their grunts.

Stan Hochman of the Philadelphia Daily News reports that
ostrich cheesesteak sandwiches and burgers are "the hottest,
healthiest food trend in the Delaware Valley."

The red meat of the ostrich looks like meat and tastes like
beef, but has less fat and cholesterol than poultry.

An efficient meat producer, the ostrich delivers one pound of
meat for every two pounds of feed. With cattle, it takes five
pounds of feed to get one pound of beef.

What is Valentine's Day without something sweet? Celebrated
every year on February 14, Valentine's Day is not only the day
to celebrate the one you love, but a day to indulge your sweet
tooth.

Why not make a special meal for your sweetie with dishes
kissed with honey? Sweetheart Salad with Honey of a Dressing,
Honey-Glazed Red Pepper with Goat Cheese and Roasted
Honey-Pepper Pork are delicious dishes that won't keep you in
the kitchen all night. And for dessert, individual Honey
Chocolate Brulees can be made ahead of time and simply
sprinkled with sugar and broiled for a moment before serving.

___Sweetheart Salad

6 ounces boneless, skinless chicken breast, sliced into 2-1/2 x
1/2 x 1/2-inch strips
1/2 cup Honey of a Dressing, divided
1 tablespoon vegetable oil
1/2 cup each thinly sliced sweet red pepper, onion and
mushrooms
4 quarts packed spinach leaves
1/4 cup sliced radishes

Marinate chicken in 1/4 cup dressing at least 2 hours or
overnight, refrigerated. Drain and reserve marinade. Heat oil in
non-stick pan and stir-fry chicken until juices run clear. Add
pepper, onion, mushrooms and reserved marinade; stir fry 1
minute. Add spinach leaves and toss in pan until barely wilted.
Add radishes and toss to mix. Makes 2 servings.

___Honey Herb Salad Dressing
Yield: 1/2 cup

1/4 cup white wine vinegar
1/4 cup honey
2 tablespoons chopped fresh basil or mint
1 tablespoon minced green onion
Salt and pepper to taste

Combine all ingredients in small bowl; mix well.

___Honey-Glazed Red Pepper with Goat Cheese

1 whole sweet red pepper, cored and seeded
1/4 cup thinly sliced onion
2 cloves garlic, crushed
1 tablespoon olive oil
3 tablespoons honey
3 tablespoons red wine vinegar
2 teaspoons dried basil, crushed
1/2 teaspoon salt dash pepper
2 whole lettuce leaves
2 ounces goat cheese
Toasted baguettes

Thinly slice red pepper. Saute pepper, onion and garlic in
oil 10 minutes or until onion and pepper are tender. Add
honey, vinegar, basil, salt and pepper; cook and stir over
medium-high heat until glazed. Serve on lettuce line plates
with goat cheese and toasted baguettes.

___Roasted Honey-Pepper Pork

1 boneless pork loin roast (about 2-1/2 lbs.)
1/4 cup honey
2 tablespoons Dijon-style mustard
2 tablespoons crushed mixed peppercorns*
1/2 teaspoon thyme, crushed
1/2 teaspoon salt
Honey Cranberry Relish Garnish: fresh thyme and cranberries

Carefully score roast 1/2 inch deep completely around roast,
taking care not to cut string holding roast together. Combine
all remaining ingredients; mix well. Spoon or brush 2/3 of
honey mixture over pork to coat. Place meat on roasting rack
in baking pan. Roast at 300 degrees F 1 hour; brush with
remaining honey mixture and cook about 45 minutes or until
thermometer inserted into thickest part registers 170 degrees
F. Cool 10 minutes before slicing. Garnish with fresh thyme
and cranberries. Serve with Honey Cranberry Relish. Makes
8 servings.

__Chocolate Honey Brulees

1 can (12 oz) evaporated lowfat milk
1 cup whole milk
2 eggs
1/2 cup honey
1 Tablespoon cocoa powder
2 teaspoons grated orange peel
1 teaspoon vanilla extract
3 Tablespoons sugar

Makes 4 servings.

In a medium bowl, whisk together evaporated milk, milk
and eggs until well blended. Mix in honey, cocoa powder,
orange peel and vanilla. Divide mixture evenly between 4
(3/4 to 1 cup capacity) oven-proof custard cups or
ramekins. Place custard cups in a baking pan. Fill pan
with boiling water to reach halfway up cups. Bake at 325
degrees F 1 hour or until knife inserted in center of cup
comes out clean. Remove cups from baking pan and
allow to cool. Cover and refrigerate custard cups until
chilled, 4 hours or overnight. Before serving, sprinkle
sugar evenly over tops of custards. Place cups under
broiler; cook until sugar melts and caramelizes. Serve at
once.

Sharing the vegetable garden with insects is inevitable.
The key in knowing when to take action for
controlling these insects is to remember the purpose of
your garden, according to University of Illinois
Extension entomologist Phil Nixon.

The bottom line is whether or not insects are reducing your
vegetable harvest, said Nixon. If so, you might consider
ways to lower their numbers. Although some pests require
insecticide control, organic or otherwise, you might
consider your particular insect problem and explore the
possibility of alternative methods of control.

The Rocky Mountain Ranch to Rail program, now in its fourth
year, gives ranchers a chance to see how their cattle perform
in a feedlot and at slaughter. The program, which is organized
by Colorado State University Cooperative Extension, Horton
Feedlots and Monfort of Colorado, is designed to provide
commercial cattle producers an opportunity to gather
feedlot and carcass-performance information on their calves.

"Ranchers often raise and sell steers with no knowledge of
how theanimals perform at slaughter. Because ranchers don't
get feedback, they are unaware of what adjustments need to
be made, so production changes are slow or never occur at
all," said Jack Whittier, Colorado State Cooperative Extension
beef specialist and program coordinator in Colorado.

This year's program steers have been delivered and are on
feed at Horton Feedlots in Fort Lupton, Colorado The 657
steers come from Colorado, Wyoming and Kentucky. Once
adjusted to their trip to the feedlot, the steers are weighed
and the information is used to compare gains until the steers
are slaughtered in late May to early July.

Following a series of devastating dust storms in the 1930s,
establishment of windbreaks for farmstead protection in
windbreaks were removed in the 1960s because of low
energy costs and high farmland values. But renewed
interests in windbreaks surfaced duyring the energy crisis
of the 1970s and continues today.

Windbreaks provide many benefits. Windbreaks reduce
wind speeds, control snow drifting and accumulation in
farmsteads, provide wildlife habitat, enhance farmstead
value and provide a more pleasant environment. Reduced
wind speeds in winter months provide monetary benefits.
Homes or confinement buildings require 7 to 25 percent
less fuel for heating. Livestock protected by a windbreak
are 3 to 7 percent more efficient in conversion of feed to
weight gain. Other benefits of windbreaks are measured in
quality of life improvements.

This time it was an oddly-striped finch that caught my
attention, perched on the feeder outside my office window.
The bird has thick bands of orange on either side of his
pecan-sized head and looks like he is wearing one of those
tear-shaped fiberglass bicycle helmets.

Never mind the dozens of goldfinches fluttering about or the
bold crowns of the Pine Siskin, it is the odd bird, the
rarely-seen-in-these-parts critter that gets the most notice. It
is this uncommon sight that gives me pause.

Isn't that the way it is with birdwatching? It's not the everyday
bird that draws enthusiasts to bogs and barrens with their
binoculars and field guides.

More than 60 million Americans feed and watch birds. Many
do this in their backyards, but many others are willing to
travel great distances and endure physical discomfort to
participate in the activity called "birdwatching." Recently
ranked with other American recreations, birdwatching
placed second ahead of gardening

It's difficult to explain the appeal of birdingwatching. It's one
of those things you've got to do to understand. But retired
Stanford professor Leonard Nathan has devoted a book to
his obsessive need to justify his pursuit of the elusive Snow
Bunting as much more than dry ornithological research
and different from a hunter pursuing his prey.

Nathan argues in "Diary of a Left-Handed Birdwatcher"
(Harcourt, Brace & Co., 1997) that a sense of epiphany, or
a "shock of recognition," occurs when an intense birdwatcher
is surprised by the sudden presence of a rare species.

"Why are watchers reluctant to lower their binoculars?" he
asks. "To make sure of the identity of the bird, yes, but also
from a strong desire to prolong so special a seeing, not the
consummation of the hunt, but the experience of knowledge.
The meaning and mystery of otherness."

Like fly fishing or listening to great music, birdwatching can
carry a person away from day-to-day concerns and into
another realm of being.

"The only motion: three Great Egrets gliding by in their
hunched flight. I have seen egrets too many times to count,
but these seem utterly fresh and vivid," Nathan writes of one
watch. "It's like an ink drawing except that I'm in it. And in it,
I require nothing else but to be in it. Now a thrush sings its
upward-circling quaver, and what seemed perfect before
seems more so now. And then a human voice calls from
somewhere behind me, and I am fetched, unwillingly, back
to the other world."

I'm no birdwatcher, but I do notice birds, especially late in
winter when so much is still and cold and hibernating. But
when I saw that bird with orange lores, I stood still and
pondered it wordlessly. For a brief moment, my observation
was a form of communion with creation, a prayer.

We all have such moments. For some, it's sunsets or
thunderstorms. For others, it's waves crashing on a beach.
Birdwatchers chase after these moments, one bird at a time.

__SHEEP CLONING RESEARCH QUESTIONED

Sheep cloning research in Scotland has come under fire
from the scientific community, including Norton Zinder of
Rockefeller University. In a letter to the journal Science,
Zinder states that there has been a lack of any confirmation
of the experiment that reportedly cloned the sheep Dolly from
an adult ovine cell. The original experiment was poorly
controlled, the interpretations untested, and corollary
mitochondrial data were not provided, Zinder claims.

In response, the cloning group headed by Ian Wilmut
provided details explaining the protocols used in the original
Dolly cloning. They claim the cloning was an unexpected and
unplanned tangent from other research. Because only 11
months have passed since publication of the results, and
since the gestation period in sheep is 5 months, there has
not yet been enough time to complete similar experiments
and publish data.

you know what methods are used to destroy pests, once
found, are do they simply not allow the avocados into the
US? I ask this because I've verified that psylium husks are
routinely treated with methy bromide at the port of entry. I
specifically want to know if anyone is radiation treating
fruits.

If the pests are found on food that reaches the U.S., it's
my understanding that the produce is not allowed to pass
through.

As for pests found in the orchards, we presume
preventative measures are taken.

School Breakfast Week, March 2-6, draws attention to the
positive impact of breakfast programs in nearly 70,000
schools nationwide.

Morning hunger is a serious problem in the United States that
affects families in every kind of neighborhood for one reason
or another. In many households, families are simply too busy
to prepare breakfast each morning. In other homes, kids
don't want to eat first thing in the morning. The end result in
both cases is that children are heading off to school hungry.

Studies prove that children who do not eat a nutritious
breakfast every day have a difficult time concentrating on
their studies, are apt to "act up" in the classroom or may not
make it to school at all. More importantly, their health could
be compromised. Children who miss out on breakfast
probably will never consume the numerous essential
nutrients they need every day to thrive, according to
well-known pediatrician and author Marianne Neifert.

Dr, Neifert says that the recommended intake of
bone-building calcium, for instance, is difficult to meet
without having breakfast. To meet their daily calcium
requirement, school-age children need to have at least
four 8-ounce glasses of milk or the equivalent.

Fun breakfasts that parents can make for fast serving
in the morning include the following:

Yield: 1 serving

2 (6-inch) flour tortillas
1/2 cup chunky apple sauce, divided
1 teaspoon cinnamon-sugar, divided
1/4 cup shredded Monterey Jack cheese
2 tablespoons vanilla yogurt (optional)

Preheat oven to 400 degrees F.

Place one tortilla on ungreased baking sheet. Spread
half of the applesauce over tortilla; reserve half for
garnish. Sprinkle half of cinnamon-sugar over applesauce. Top
with cheese and second tortilla. Sprinkle remaining
cinnamon-sugar on top.

Bake at 400 degrees F for 6 to 8 minutes or until golden
brown. Cool 2 minutes.

Cut into quarters and serve topped with reserved applesauce
and vanilla yogurt.

__English Muffin Breakfast Pizza
Yield: 2 servings

1 English muffin
1/4 cup pizza sauce or seasoned tomato sauce
2 ounces mozzarella cheese, part-skim, shredded
(about 2/3 cup)

Preheat oven to 400 degrees F.

Line a cookie sheet with foil. Split English muffin in half; lay on
prepared cookie sheet in a single layer.

Spread each muffin half with 2 tablespoons sauce and top
each with 1/3 cup cheese.

Bake at 400 degrees F for 8 to 10 minutes or until cheese is
melted and pizza is heated thoroughly.

__Ham and Cheese Squares
Yield: 12 servings (about 3' x 3 1/4')

1 lb. frozen hash brown O'Brien potatoes, thawed (about 4
cups)
6 ounces fully cooked turkey ham, cubed
4 ounces (1 cup) shredded Cheddar or Swiss cheese
6 eggs, beaten
1 cup plain nonfat yogurt
1/2 teaspoon salt
1/4 teaspoon pepper
1 apple, sliced

Preheat oven to 350 degrees F.

Combine O'Brien potatoes, turkey ham, cheese, eggs, yogurt,
salt and pepper;spread evenly in greased 13-x9-inch baking
pan.

Bake at 350 degrees F for 40 to 45 minutes or until golden
brown and center is firm.

Let stand 5 minutes. Cut into squares. Garnish with apple
slices and serve immediately.

NOTE Timesaving Tip: Prepare squares the night before;
cool, cover and refrigerate. To reheat each serving, place
square on microwaveable plate. Cover lightly with wax paper.
Heat at HIGH 45 seconds to 1 minute or until heated through.
Microwaves vary, so adjust time accordingly.

this article is a joke. The school lunch breakfast program is
seriously flawed. How can you expect children to eat cycle
meals, slopped on a tray, carried to a table, in a room with
a noise level of a major highway and call it healthy? Also
they have to do this in an approx. 11 minutes with adult
supervisor chiding them to hurry up?????? You don't have
to make food "Cute" to make kids eat it , you have to
understand that these kids want to be apart of their choices.
The school breakfast/lunch program is to focused on making
the "cafeteria ladies" wear hairnets, instead of letting healthy
food choices occur..... yes children are being
fed, but everything is canned and processed.

I'm sure your heart is pure. I'm sure you would never dream
of hurting a child. I'm sure you clearly identify improved
nutrition with helping children to be their best.

But school breakfast programs are not the way to go in my
opinion. They are but one more step in a creeping socialism
that, unchecked, will destroy the family. The next step for
that vast army of family-life interferers is to put
school-dinner programs into place. Then, if I'm any judge of
their character, they will want to arrange overnight sleeping
programs for children "they" identify as not having a safe
home life. I'm very serious about this: socialists do not know
where to stop. Each victory, such as a school breakfast
program set up in yet another school is only cause for
momentary pause.

A far better answer than allowing them to interfere with family
life is to put fruit bowls, filled with nature's goodies, in
every classroom. Available to rich or poor, the children would
self regulate. Such a program would cost but a small fraction
of the bureaucracy-bloated concepts of the socialistic crowd.
It would also help the children get a modicum of non-tampered
food in their tummies.

Please don't run any more articles that glorify this sad
debilitating experiment on our way of life.

DEAR TIM: A new fireplace is in my immediate future. I don't
want to ruin the ocean view from my beachfront house. Is it
true that you can install a gas fireplace under a window
without using a vertical chimney? If this is so, can I place the
fireplace towards the center of the room? Do the gas fires
look real? What else is new with fireplaces? Andy P., Wells

DEAR ANDY: Advancements in technology have touched
many building products in the past 15 years. However, in my
opinion, the fireplace industry has produced some of the
most dynamic and dramatic changes. For example, who
would have thought that you could have a gorgeous fireplace
without an obnoxious chimney? Guess what? It is possible!
That orange glow you will see in the morning directly above
the fireplace won't be a reflection of the flames and embers,
it will be the sunrise!

The fireplaces that do not require traditional chimneys
incorporate direct vent technology. These fireplaces do not
burn wood. Natural gas or liquid petroleum (LP) gas are used
instead. The use of this fuel source allows these highly
efficient units to act as primary or secondary heating sources
depending upon the size of the area being heated. Some large
models have Btu inputs as high as 36,000 and an overall
thermal efficiency of 70%. These numbers translate to a
toasty warm family room, great room, or living room.

If you have a small cabin or use these fireplaces in a room
addition, this type of heat output can often easy heat the
space with no help from a furnace. You can even purchase
a fireplace and air conditioner in the same unit if you
choose!

The direct vent technology allows you to place these
fireplaces in unique locations. Some models allow you to be
20 feet away from an exterior wall. As you might imagine, this
allows you to install a fireplace in rooms and areas that were
previously taboo.

Gas powered fireplaces are so realistic that even I am getting
ready to purchase one. Technology has also made huge
advancements here. You will be amazed at the different types of
log sets, wood species, configurations, and glowing embers that
are available. You can even purchase a log set that looks like a
real campfire. A recent set of gas logs I installed were so realistic
that they fooled every person in the room who was viewing the fire.
I myself was mesmerized by the fire's realism.

Direct vent fireplaces allow people to install these highly efficient
appliances in basements. Newer top vent models allow you to
exhaust the fireplace upwards until you can pop the vent outside
horizontally above grade. The installation of even the toughest
direct vent fireplace can usually be accomplished in one day or
less. Compare that to the ordeal of installing a traditional masonry
fireplace!

If you happen to be a couch potato, you will love the new remote
controls that come with many direct vent fireplaces. These
controls allow you to turn the fireplace on and off. Some controls
will monitor the room temperature and shut the fireplace off when
the room reaches a preset comfort level. The newest control allows
you to even adjust the flame height and blower speed much like
you adjust the volume on your TV! If you like late night fires, you
can even have the fireplace shut itself off.

One of the best advancements in fireplace technology is the
sealed combustion chamber. Many direct vent models allow you to
enjoy all the benefits of a fire without causing indoor air pollution.
The sealed fire chambers get all of the necessary air for fuel
combustion from the exterior of the home. Using special dual
walled pipe, they simultaneously exhaust 100 percent of all
fireplace gases. This feature helps maintain the high level of
energy efficiency you most certainly are striving for in that
beachfront house.

Quarterly earnings reports will be released soon.

Shareholders of corporations large and small take a keen
interest in this news. Earnings for the quarter indicate what
dividends investors can expect from their shares and what
value their shares are likely to have in the coming weeks.
The earnings report is a gauge they use to measure the
health of their investment.

Not all shareholders receive reports of earnings, however,
and some investors are more concerned this time of year
with seed viability and emergence. The health of their
investment is usually determined by the weather.

Increasing numbers of investors all across North America
are buying shares in Community Supported Agriculture
(CSA), a 25-year-old experiment in cooperative economics.
Shareholders purchase a portion of a farm's (or group of
farms) crop in the spring, often before it's even planted,
and receive a share of its harvest throughout the summer
and fall.

Farmers benefit from this arrangement because they get
capital to work with up front in the spring and they have a
"community" of shareholders to share the risk with. If the
crop fails, all lose out proportionally.

Shareholders benefit from first-hand knowledge of where
their food comes from and how its grown. They may also
have a voice in the farming practices used and the varieties
selected.

For some shareholders, belonging to a CSA is farming by
proxy, the next best thing to growing it themselves. Many
CSAs invite their shareholders to drop by the farm and help
out with chores; some even hold workshops and seminars to
educate their partners in agricultural realities.

The cash outlay to become a shareholder varies from farm
to farm, but generally ranges between $500 and $1,000 for
the season. Across an eight-month April-November season,
that averages about $22 per week, which is about what
a family would spend on produce at a supermarket.

The cost seems larger when paying in one lump sum, and
paying in advance for produce is a practice most consumers
resist, which is why CSAs have not spread more quickly.
What is feeding their growth these days is concern over food
quality, a growing market for organic produce and the desire
to have more control over one's food supply.

The tender sweetness of a fresh-picked strawberry, the
robust flavor of a vine-ripened tomato and the wholesome
integrity of an organically grown potato are dividends that
CSA shareholders care most about.

Earnings are important, especially when you have your
family's financial future riding on the performance of a
particular stock or fund portfolio.

Food source is equally critical. The food you buy and
consume has both an immediate and long-term impact on
physical performance and how you make the purchase,
and who you buy from, helps shape the community in
which you live.

__EVERYBODY'S IRISH ON ST. PATRICK'S DAY

On St. Patrick's Day, everyone becomes a little bit Irish.

We like to wear a touch of the green and celebrate with
favorite foods. There's no blarney about traditional Irish
cooking. It's simple, savory fare prepared with fresh
ingredients -- like one-pot, hearty beef dishes accompanied
by flavorful, robust home-baked breads.

Either of these two slow-simmered beef dishes would make
a delicious St. Patrick's dinner.

RECIPE: Beef & Winter Vegetable Stew
Total preparation and cooking time: 2 hours

2 pounds beef for stew, cut into 1-inch pieces
2 tablespoons vegetable oil
2 cups chopped onions

1/2 teaspoon salt
1/4 teaspoon pepper

1 can (13-3/4 to 14-1/2 ounces) ready-to-serve beef
broth
1 cup dark beer or nonalcoholic beer
1 pound small red potatoes, quartered
3 medium carrots, cut into 1/2-inch pieces
2 tablespoons cornstarch dissolved in 3 tablespoons
water
Chopped fresh parsley (optional)

In Dutch oven, heat oil over medium-high heat until hot.
Add beef and onions (half at a time) and brown evenly;
stir occasionally. Pour off drippings. Return beef mixture
to pan. Season with salt and pepper. Stir in broth and
beer. Bring to a boil; reduce heat to low. Cover tightly
and simmer 1-1/4 hours.

Add potatoes and carrots. Bring to a boil; reduce heat to
low. Cover tightly and continue cooking 20 to 30 minutes
or until beef and vegetables are tender.

Stir in cornstarch mixture. Bring to a boil; cook and stir 1
minute or until thickened. Garnish with chopped parsley, if
desired.

Makes 6 servings.

RECIPE: Braised Beef With Roasted Parsnips, Leeks &
Red Peppers
Total preparation and cooking time: 2-3/4 hours

2-1/2-to 3-pound boneless beef chuck pot roast (arm, blade,
chuck eye or shoulder)
2 teaspoons vegetable oil

1/2 teaspoon salt
1/4 teaspoon pepper

1 can (13-3/4 to 14-1/2 ounces) ready-to-serve beef broth
1/2 cup chopped onion
1 large clove garlic, crushed
2 tablespoons chopped fresh parsley
1 bay leaf
Roasted Parsnips, Leeks & Red Peppers (recipe follows)
2 tablespoons cornstarch dissolved in 3 tablespoons water
Chopped fresh parsley (optional)

In Dutch oven, heat oil over medium heat until hot. Add beef
pot roast; brown evenly. Season with salt and pepper. Add
broth, onion, garlic, 2 tablespoons parsley and bay leaf.
Bring to a boil; reduce heat to low. Cover tightly and simmer
2-1/4 to 2-1/2 hours or until pot roast is tender.

Approximately 1 hour before end of cooking time, prepare
Roasted Parsnips, Leeks & Red Peppers.

Remove pot roast to platter; keep warm. Skim fat from
cooking liquid; discard bay leaf. In same
pan, combine 2 cups cooking liquid and cornstarch mixture.
Bring to a boil; cook and stir 1 minute or until gravy is
thickened.

Serve pot roast with roasted vegetables and gravy; garnish
with parsley, if desired.

Makes 8 servings.

Cook's Tip: For chuck eye roast, tie roast at 2-inch
intervals with heavy cotton string.

RECIPE: Roasted Parsnips, Leeks & Red Peppers

8 small parsnips (approx. 1 pound)
6 small leeks (approx. 2 pounds), well cleaned
2 red bell peppers, cut into 2-inch pieces
2 tablespoons vegetable oil
1-1/2 teaspoons dried marjoram leaves, crushed

1/2 teaspoon salt
1/4 teaspoon pepper

Heat oven to 350 degrees F. Peel parsnips and cut into 3-inch
lengths. Cut thick end pieces lengthwise in half. Cut leeks into
3-inch lengths (white and light green parts only). Place
vegetables in 15 x 10-inch jelly roll pan. Drizzle with oil;
sprinkle with marjoram, salt and pepper. Toss to coat.

Roast in 350 degree F oven 35 to 40 minutes or until tender
and lightly browned; stir once.

Makes 8 servings.

Cook's Tip: Three medium carrots may be substituted for
bell peppers. Peel and cut carrots the same as parsnips.

RECIPE: Potato Rolls
Total preparation and cooking time: 1-1/4 to 2 hours

4-1/2 to 5 cups plus 1 tablespoon all-purpose flour,
divided
1/2 cup mashed cooked potato
3 tablespoons sugar
2 packages (1/4-ounce each) quick-rise yeast
1-1/2 teaspoons salt
1-1/4 cups water (reserved from boiling potatoes or tap water)
3 tablespoons butter

Combine 2 cups flour, potato, sugar, undissolved yeast and
salt in large bowl. Heat water and butter until very warm (125
degrees F to 130 degrees F); stir into yeast mixture. Stir in
enough remaining flour to make soft dough. Knead on lightly
floured surface until smooth and elastic, about 6 to 8 minutes.
Cover; let rest 10 minutes.

Divide dough into 16 equal pieces; form into balls. Place in
2 greased 8 or 9-inch round cake pans. Cover; let rise in
warm, draft-free place until doubled in size, about 20 to 40
minutes. Sprinkle 1 tablespoon flour on rolls. Bake in 400
degrees F oven 20 minutes or until golden brown. Remove
from pans; cool on wire racks.

Makes 16 rolls.

Make-Ahead Method: Heat water and butter until warm to
touch (105 degrees F to 115 degrees F). Mix and shape
rolls as directed above. Place in pans. Grease tops of rolls;
cover with plastic wrap. Refrigerate 2 to 24 hours. To bake,
remove from refrigerator. Uncover rolls; let stand 10 minutes
at room temperature. Bake as directed above.

Cook's Tip: To use instant potatoes, combine 1/3 cup water
and 2 tablespoons milk in saucepan; bring to a boil. Remove
from heat and stir in 1/3 cup instant potato flakes or buds.

Often marketed by the trademark name,
ugli fruit, uniq fruit is a tasty citrus
cross between a mandarin orange and
grapefruit. Its skin peels easily to reveal
sweet yellow-orange sections with
occasional seeds.

The uniq fruit was discovered as an accidental
seedling in Jamaica where it was propagated
and exported beginning in the 1930's. It ranges in
size from a large navel orange to that of a hefty
grapefruit. Its puffy, thick skin makes the uniq fruit
much easier to peel than other citrus fruits and
usually ranges in color from lime-green to a light
orange. The fruit's yellow-orange flesh is
relatively free of seeds and is very juicy once cut.

Uniq fruit can be enjoyed in much the same way as
other citrus fruits and is especially wonderful eaten
peeled and sectioned. The fruit may be halved like
a grapefruit or used as a light addition to fruit or
vegetable salads, gelatin desserts and compotes.
Peel and segment uniq fruit as you would other citrus.

Look for uniq fruit that is heavy for its size, with no
sign of drying at the stem end. The fruit often has
some natural traces of mottling, bronzing, surface
scarring or uneven coloring. Because of uniq fruit's
thick skin it may be stored for up to 2 weeks in a
commercial cooler at 50-55 degrees F.

Available from December to April, uniq fruit is a
good source of vitamin C and is high in fiber.

___ADHESIVES AND GLUES: STICK WITH THE RIGHT ONE

DEAR TIM: I recently visited a home center in search of some
glue for a project. Once in the correct aisle, I was
overwhelmed by the assortment of glues, adhesives, cements,
and epoxies. Is there a multi-purpose glue that will work for
virtually all projects or do I have to buy some of each to
successfully glue objects in my home? Are there some really
good waterproof glues available for bonding wood together?

DEAR ERIN: I can attest to your dilemma. There are many
glues, adhesives, cements, and epoxies. Most, if not all of
these products, are excellent when used correctly.
Unfortunately, to the best of my knowledge, there is no one
"wonder"glue that will work for all of your jobs. Different jobs
and objects will require you to use different glues. However,
there is one newer glue that is not only strong but will
successfully bond, many, many things together. More on
that in just a moment.

Glues and adhesives can be simple or complex with respect to
makeup. Animal glues are still made today. These simple, yet
effective, glues are often made from proteins found on the
underside of animal hides. Bones, blood, and other animal
byproducts such as milk can even be used. The adhesive
experts seem to agree that the discovery of these glues was
quite by accident. Early man probably saw how difficult it was
to remove dried blood and skins from spears, knives, and
other objects.

Most modern glues and adhesives are synthetic. They create
a bond in one of two ways. Simple glues such as the white
school glue and yellow carpenter's glue bond mechanically to
objects. The glue itself actually flows into the pores of the
object. This can be a nightmare for wood workers as excess
glue can seal surface pores adjacent to a glued joint. The
sealed visible wood pores will not accept wood stain! Avoid
wiping excess glue from a joint. Let it dry and then sand it off.
To minimize this problem some glue manufacturers actually
add small wood fibers to their yellow glues. These wood fibers
readily accept the wood stains.

On a microscopic level, the mechanical bond can be very
effective. In fact, these inexpensive glues can achieve
strengths near 4,000 pounds per square (PSI) inch when
used on wood species with a high density. Hard maple is one
such wood. To achieve the best bond when using white or
yellow glues, the objects being glued need to be very uniform,
smooth, and dust free. If there are cracks or voids, the bond
will be poor.

Clamping is also vital. Once you have pressed together the
two objects being glued, they must be clamped tightly for a
period of time. Different glues and adhesives have different
clamp times. Failure to clamp the objects will result in a
weakened bond.

Other glues rely on specific adhesion bonding. These
adhesives react chemically with the object they stick to.
Examples of these adhesives are many epoxies. Epoxies are
not only very strong but they are also very selective. You often
need special formulations and types to bond certain objects.

The newer urethane glues are quite interesting. They are
actually activated by moisture. You can often use these glues
on lumber that has up to a 25 percent moisture content. These
glues actually foam and expand as they cure. This expansion
property helps to fill small voids between the objects being
glued. The newer polyurethane glues mechanically bond to
masonry, glass, wood, metal, and many plastics. Once dry the
urethane glues are highly water resistant. Some are
completely waterproof. These glues are probably the most
versatile ones you will find. Buy it in smaller bottles, as it can
actually set up within the bottle. As you use the glue, the bottle
fills with air. Moisture in the air can react with the remaining
glue and cause it to spoil.

Construction adhesives in a tube are formulated to bond
poorly fitting materials. These glues can easily bridge gaps.
However, these adhesives are generally not as strong as the
others. They only will achieve 600 PSI strengths. These
adhesives are for rough work where clamping is often difficult.
They are also very water resistant.

To achieve the best results when using glues, always read the
instructions on the label. Follow directions to the letter. It is
always preferable to test the glues first before using them. I
know this will take you an extra day or so, but it will be worth it!

papayas from Brazil. It is also amending the regulations to
apply the same conditions to the importation of papayas from

Does the thought of dealing with frozen chicken at mealtime
give you cold chills? Waiting for it to thaw, trying to separate
the parts, all that extra time and hassle? It doesn't have to be
that way if you use individually quick frozen (IQF) chicken.

IQF chicken isn't a new product. It's been around for more
than 20 years. But for much of that time, it was available
only to businesses like restaurants or through wholesale
clubs. Today most supermarkets offer IQF chicken for
in-home use.

IQF chicken is very different from the fresh chicken you
purchase and freeze yourself. In standard slow freezing
(such as in a home freezer), large ice crystals form inside the
meat, breaking down the fibers and making it tough and dry
when cooked. IQF chicken is quick frozen using a special
technique that protects both the quality and texture of the meat.
IQF chicken is also coated with a thin ice glaze that helps
prevent freezer burn and gives it a longer storage life.

When you freeze fresh chicken at home, it loses moisture
and flavor. To avoid this problem, most types of IQF chicken
are deep marinated with a natural solution before freezing.
Deep marination enhances the natural chicken flavor and
helps preserve juiciness and tenderness during storage, as
well as during cooking.

Another problem with freezing chicken at home - especially
chicken parts - is that all the pieces stick together. You
have to either wrap the pieces separately before freezing
them (a messy, time-consuming process) or thaw and cook
the entire package of chicken at once. With IQF chicken,
each piece is individually frozen so there's no sticking
together. You can use only the number of pieces you need
and save the rest for another meal.

But perhaps the best feature of IQF chicken is that it
doesn't require thawing before cooking, so it's always
ready when you are. It can be used straight from the bag
in virtually any recipe. And whether it's baked, grilled or
fried, it turns out tender, juicy and great-tasting.

Here are a few recipes using IQF chicken:

__RECIPE: Zesty Chicken Breasts

4 Boneless Skinless Chicken Breasts, frozen
1/3 cup white wine vinegar
1/3 cup water
1 tablespoon butter or margarine
1 tablespoon Worcestershire sauce
1 tablespoon garlic salt
1/2 teaspoon coarsely ground pepper

Preheat oven broiler. Hold chicken pieces under
lukewarm running water for 1 to 2 minutes to
remove the protective ice glaze. In a small saucepan,
combine vinegar, water, margarine, Worcestershire
sauce, garlic salt and pepper; bring to boiling. Place
breasts on rack in broiler pan. Brush with half of sauce;
broil about 6 inches from heat source for 8 minutes.
Turn over and baste with remaining sauce. Broil 8 to 9
minutes longer or until chicken juices run clear.
Serve with pasta and steamed mixed vegetables, if
desired. Serves 4.

Nutritional Information per Serving: 192 calories,
72 calories from fat, 8g total fat, 28g protein,
2g carbohydrate, 75mg cholesterol, 1294mg sodium

__RECIPE: Fiesta Chicken Soup

6 Boneless Skinless Chicken Tenderloins, frozen
2 cans (14 1/2 oz. each) low-sodium chicken broth
1 can (15 oz.) kidney beans, undrained
1 cup salsa
1 cup frozen whole-kernel corn
1/2 cup uncooked instant rice

Hold chicken pieces under lukewarm running water for 1-2
minutes to remove the protective ice glaze. Cut chicken into
1-inch pieces. In large saucepan, combine chicken,
chicken broth, kidney beans, salsa and corn. Bring to a
boil. Reduce heat and simmer, uncovered, 5 to 10 minutes
or until chicken is done. Stir in rice, cover and remove
from heat. Let stand minutes. Top individual servings of
soup with shredded Monterey Jack cheese, toasted tortilla
strips and sliced avocado, if desired. Serve with fresh fruit
and cornbread, if desired. Serves 4.

calories from fat, 2g total fat, 38g protein,
39g carbohydrate, 68mg cholesterol, 1441mg sodium

__RECIPE: Warm Chicken Caesar Wraps

8 Boneless Skinless Chicken Tenderloins, frozen
1 cup water
1 cup uncooked instant rice
3/4 cup fat-free Caesar salad dressing
8 (10-inch) flour tortillas, warmed
2 cups shredded lettuce
2 tomatoes, chopped
1/2 cup seasoned croutons (optional)

Spray a large skillet with nonstick cooking spray.
Add chicken; cook over medium-high heat for
12 to 15 minutes or until light brown and juices run clear.
Add water. Bring to a boil; add rice. Cover, remove from
heat; let stand for 5 minutes or until liquid is absorbed.
Stir in salad dressing. Fill each tortilla with lettuce,
chicken and rice mixture, tomatoes and croutons.
Fold in sides of tortilla and then roll up. Serve with black
beans and fresh fruit, if desired. Serves 4 (2 wraps each).

Nutritional Information per Serving: 660 calories,
120 calories from fat, 14g total fat, 27g protein,
107g carbohydrate, 30mg cholesterol, 1240mg sodium
