I am chairperson of our local Farmer's Market in Austin, MN. It's a
small, but active market in southcentral MN. Austin is a city of about
25,000. Our market has been active since 1974 and sponsored by the Austin
Chamber Ag. Committee. In the past they have made sure we have parking
lot. They have also maintained our checking account - all the funds have
been derived from vendor permit fees. The only other thing they have done
is send an invitation to vendors for our annual organizational meeting
each March.

Since advertising costs have gone up, we have approached this committee
with a request for some monetary sponsorship, but now the whole idea of
sponsorship has come into question. I would like to know how other
Farmer's Markets in the country operate. Are they independent? If they
have sponsorship from a local agency or chamber, what does this
sponsorship entail? Any information and guidance would be appreciated.

college, which included a class in general psychology. On the third day of
class the instructor introduced the concept of emotional extremes.

"Just to establish some parameters," said the instructor, "What is the
opposite of joy?"

"Sadness." said a student in the front row.

"And the opposite of depression?"
"Elation, " said another student near the front of the class.
 
"How about the opposite of woe, Ridley?" the instructor asked.

Ridley straightened up, thought quickly and announced, "I believe that's
giddyap."

Blue Book Bargain

The Kelley Blue Book, printed and sold as a small pocket-sized booklet for
the past 70 years, is the undisputed reference of choice when it comes to
determing the value of a used car.

The new Kelley Blue Book Web site, located at http://www.kbb.com provides
fill-in forms that help vehicle owners determine how much their trade-in
is really worth. Almost every make and model of vehicle for the past 21
years is included, from the 1976 Ford Pinto to the 1997 Land Rover.

Details on new cars and trucks are available as well, including both the
dealer's invoice price and the suggested retail price.

Commodity reports.

_Almonds
California almond production totaled 520 million meat pounds, 41 percent
above the 1995 total. (Visit the Farmer's Market Online Almonds Booth.)

_Apples
Apple production for 1996 was estimated at 10.4 billion pounds, 1 percent
less than 1995 and 9 percent below 1994. A 13 percent increase in apple
production in Washington and a 6 percent increase in California was not
enough to offset drops in Michigan and New York. Quality was excellent
in Washington, but fruit size was generally smaller than a year ago. In
Michigan, poor sizing resulted from the near drought conditions in August
1996.

_Ginger Root
Chicago Terminal Report 1/14 -- 30 lb cartons from Costa Rica $22.00, a
few $20.00, one label $25.00, one label $32.00; from Hawaii $34.00-35.00,
one label $38.00-39.00, fair quality $30.00

_Grapes
Utilized grape production for 1996 totaled 5.53 million tons, down 6
percent from 1995 and down 6 percent from 1994. California production
declined 4 percent from last year. California wine type showed the
biggest decrease at 8 percent from a year ago, while raisin type
decreased only 2 percent. Washington and Michigan production decreased
while New York and Pennsylvania increased from a year ago.

_Hazelnut
U.S. hazelnut production totaled 19,000 tons in 1996, less than half of
1995's output. This was the smallest crop since 1989.

_Macadamia Nut
Hawaii macadamia nut production climbed to a record high 55 million
pounds, up 8 percent from the previous year.

_Pears
Pear production was placed at 778,750 tons, down 18 percent from 1995. Of
the major pear-producing states, California was up 7 percent from last
year while Oregon was down 26 percent and Washington was down 30 percent.

_Pecans
U.S. pecan production fell to 227 million pounds in 1996, down 15 percent
from last year.

_Pistachio
California pistachio production was estimated at 106 million pounds for
1996, a decrease of 28 percent from a year ago.

__Potatoes
Consumption has been setting records, but the 1996 crop is the largest
ever, depressing prices to growers to $2 a sack and under.

_Walnuts
California walnut production decreased 12 percent in 1996 to 205,000 tons.

__Yams

Top Shiitake Recipe Selected

Judging is complete and an entry by Susan Asanovic of Wilton, Connecticut,
has been selected the winner of the Shiitake Mushroom Cooking Contest
sponsored by Farmer's Market Online and Twin C Shiitake.

Asanovic's recipe, an amazingly low-fat and tasty dish that highlights the
unique flavor of Shiitakes with a sweet miso and dark soy sauce and a
garnish of scallions, was entered as follows:

Recipe: Now and Zen Double-Steamed Shitakes with ginger-miso essence
10 servings
4 shitakes / portion

The idea is for steam to slowly rise above, and recondense on the
mushrooms. If available use a Chinese Steam Pot (or also called a Yunnan
Steamer). (see note) However you can easily make these in a regular
steamer with a tight-fitting metal cover, or even a couscoussier.

40 large dried shitake mushrooms, reconstituted one hour in warm water to
cover.
4 tablespoons sweet miso
1 tablespoon dark soy sauce
2 teaspoons granulated sugar
2 teaspoons toasted sesame oil
2 ounces fresh peeled ginger, julienned
5 scallions, shredded

Drain mushrooms, strain and reserve. Combine miso, soy sauce, 1 cup of
soaking liquid, sugar and oil. Toss with mushrooms. Place shiitakes and
sauce in steam pot or in a shallow dish which fits inside your steamer.
Cover with ginger and half the scallions Fill bottom of steamer with
boiling water, cover pot tightly and steam 20 minutes. Remove ginger and
scallions. Plate four mushrooms in individual shallow bowls. Divide
collected juices around mushrooms and garnish with remaining scallions.

For 10 servings, you may need to do this in two batches or a large
steamer.

Chef’s note: Yunnan steam pots can be purchased in Chinatown, or through
the Joyce Chen catalog. If using, place it inside a larger pot filled with
boiling water halfway up the steam pot. Cover larger pot tightly.

Recipe: Roasted Chicken Breasts With Glazed Kumquats
from Nicole Routhier's Fruit Cookbook (Workman, 1996)

2 whole bone-in chicken breasts, with skin on (about 3 pounds total),
rinsed and patted dry
Salt and freshly ground black pepper
2 tablespoons mild olive oil
2 large heads garlic, separated into cloves and peeled
half pound pearl onions, peeled
half cup fresh lemon juice
1 cup chicken broth, preferably homemade
2 cups thinly sliced kumquats (20-25 large kumquats, about a quarter pound
total)
3 tablespoons sugar

Preheat the oven to 450 degrees F

Season the chicken with salt and pepper. Heat the oil in a large, haevy
ovenproof skillet over medium-high heat. Add the chicken and brown on both
sides, about 30 seconds per side. Push the breasts to the side of the
skillet. Add the garlic and onions and cook until lightly browned, about 2
minutes. Stir in the lemon juice and broth. Spread out the chicken evenly
in the skillet and transfer the skillet to the oven. Roast until the
chicken registers 145 degrees F on an instant-read thermometer inserted in
the thickest part of the breast and the vegetables are tender, about 30
minutes.

Meanwhile, combine the kumquqats, sugar, and a third cup water in a
medium-size saucepan and bring to a boil over medium heat. Simmer,
uncovered, until the kumquats are translucent and tender, and almost all
the syrup has been absorbed, about 15 minutes. Set aside.

When the chicken is cooked, transfer it to a cutting board, leaving the
sauce in the skillet. Stir the glazed kumquats into the sauce. Bring the
mixtuyre to a boil over medium-high heat and cook until slightly thickened
and syrupy, about 3 minutes. Season to taste with salt and pepper.

Carve each breast in half to obtain 4 boneless halves. Arrange them on
warmed dinner plates and top with kumquat sauce.

To select, squeeze gently to make sure of firmness. Do not buy soft, wet
fruit. A nice shine on the rind is a sign of freshness.

Storage
Stored at room temperature, will stay fresh for a day or so. Refrigerated,
they'll last up to two weeks.
Do not wash before refrigeration.

Preparation/Serving
Wash well before serving.
Before serving raw, blanch in boiling water and quickly plunge into ice
water to tenderize rind.
Slice into fruit and lettuce salads.
Bake into cakes and tarts.
Add to any orange-based sauce.

_Backhaul Services Could Cut Freight Costs

An Internet service designed to revolutionize international freight
transactions by slashing load costs has been launched by a Canadian firm,
Backhaul Network Inc. of Burnaby, British Columbia.

Aimed specifically at the trucking industry, the service uses the Internet
to cut fees paid to brokers for shipment details by up to 95 percent.

Backhaul Network, and its affiliated Eurohaul Network, allow shippers
world-wide to post shipment details free of charge for loads to, from and
inside North America and Europe on specially designed Internet bulletin
boards. Trucking companies can browse posted shipments and submit
freighting bids via anonymous email to shippers at no cost. Negotiations
are handled via anonymous email and when a load price has been agreed, the
chosen carrier pays $20 US online for the shipper's contact details.

Carriers usually pay 10% of their wages for shipment information, ranging
from $150 to $350. With surcharges, fees can reach as high as $1,000 per
load.

Both networks operate in English, French and Spanish. The Eurohaul Network
will offer eight more languages including Russian in the near future to
accommodate non-English speaking truckers.

_U.S. Postal Rates Steady Through 1997

Following its second profitable year in a row, the U.S. Postal Service is
promising no general rate increases through 1997.

The Postal Service is expected to file its next omnibus rate case with the
Postal Rate Commission in the fall of 1997, but any new rates would not go
into effect until the fall of 1998.

Proponents of bioengineering believe it is allowing us to develop foods
which are affordable, nutritious, available year-round and more
environmentally benign that those which rely heavily on chemical inputs.

Critics, mostly consumer and environmental groups,fear the long-term
effects of genetic manipulation on human and ecological health.

In a mostly critical article, the January/February issue of Mother Jones
examines the issue of bioengineered foods and points out where these
"brave new foods" have already appeared in supermarkets:

>Corn Syrup, Cereal. The first commercial crop of corn implanted with a
gene from Bacillus thuringiensis (Bt) bacteria, was harvested in the fall
of 1996.

>Potatoes. "Monsanto's NewLeaf potatoes also contain Bt, which is toxic to
the Colorado potato beetle."

>Processed Foods. Soybeans, an ingredient in many processed foods, have
been mated with genes from petunias, bacteria, and cauliflower to create
the herbicide-proof Roundup Ready variety from Monsanto.

>Milk. Many milk cows are injected with bovine growth hormone (BGH) to
increase milk production.

_Conservation Tillage for Subtropics

While crop residue-based systems have gained acceptance in the Midwest,
they do not work on the vastly different soils and climate of the Gulf
Coast where weeds must be controlled year-round and several tillage trips
to plow them under is commonplace.

Researchers at the Conservation and Production Systems Research Unit of
the USDA's Subtropical Agricultural Research Laboratory at Weslaco, Texas,
have discovered ways to maintain crop residue cover and control weeds with

systems could increase net returns an average of $30-50/acre for major
crops like cotton, sorghum, and corn.

_Tolerant Hybrid

Growers in thge Mid-Columbia Basin of central Washington are excited about
a new hybrid wheat that tolerate greater extremes of moisture and heat
than regular certified varieties.

Available on a limited basis from HybriTech Seed International, nine
varieties of the hybrid hard red winter wheat have been released. Next
fall, HybriTech expects to begin limited marketing of soft white winter
wheat, which is primarily sold for making noodles. Most hard red from the
Northwest goes to bread.

_Lobster Forecast

A team of scientists led by Maine/New Hampshire Sea Grant Program
researcher Bob Steneck, believes it has developed the tools to predict
whether it will be a good or bad year for lobster harvests in a specific
area.

Using special "lobster collectors" to determine regional patterns in newly
settled lobsters, pre-harvestable lobsters, and harvestable stocks, the
researchers anticipate that the pattern of abundance that shows up in the
collectors will be reflected in the lobster harvest six to eight years
later.

Ultimately the research team will determine if regional differences in the
number of newly settled lobsters and pre-recruits correspond to
differences in catch.

Commodity reports.

_Eggplant.
NASS Vegetable Report 1/17 -- Acreage for winter harvest in Florida at 700
acres, was 17 percent greater than in 1996 but 12 percent less than in
1995. Weather and growing conditions have been mostly favorable. Some
minor wind damage occurred in some fields. However, producers reported
that the crop had good grade and yield.

_Escarole/Endive
NASS Vegetable Report 1/17 -- The harvested acreage of Florida's winter
crop of escarole and endive is forecast at 700 acres, 18 percent below
last year but 8 percent greater than in 1995. Heavy rainfall caused by
Tropical Storm Josephine and Hurricane Lili in early-to-mid October
damaged some plants but most recovered in the milder weather.

_Lettuce
Acreage for harvest is forecast at 71,000 acres in Arizona and California.
Harvested 1997 acreage in the two states is 3 percent below last year,
but 18 percent above their 1995 total. Wet weather in California led to
an increase in weeds in some areas. The crop was in generally good
condition but warmer temperatures were needed.

_Onions.
Growers intend to plant 36,400 acres of spring onions for 1997, a decrease
of 11 percent from 1996 and 2 percent less than the 1995 acres planted.
In Texas, acreage was down due to producer concerns over the availability
of irrigation water. In California, wet grounds had delayed some
plantings and promoted weed growth in some fields. Producers in Georgia
rated their crop condition as fair.

_Peppers
NASS Vegetable Report 1/17 -- Florida winter acreage for harvest is
estimated at 4,800 acres, 20 percent less than last year and two years
ago. Rainy, windy weather from Tropical Storm Josephine caused some
foliage damage and reduced yield prospects. Heavy rainfall again
reduced crop prospects when Hurricane Lili passed to the south about
mid-October. Drier weather from late October through early November
allowed most plants to recover. Windy, cooler weather during mid-November
slowed fruit setting and sizing, caused foliage to burn increased bloom
loss, and scarred some fruit in southern fields. Milder weather from late
November into early December boosted crop development and allowed
transplanting to proceed on schedule in the east coast and southwestern
regions. Cold winds near mid-December again caused some crop damage with
most plants recovering well in the warm, calm conditions existing from
late December into early January.

_Spinach
NASS Vegetable Report 1/17 -- The harvested acres of winter spinach for
1997 is forecast at 2,100 acres in Texas. This is 25 percent below 1996
and 19 percent less acreage than 1995. Dry conditions and producer
concerns about the availability of irrigation water accounted for the
acreage decline.

_Strawberries.
NASS Vegetable Report 1/17 -- Florida winter acreage is estimated at 6,100
acres, 100 acres greater than last year and two years ago. Crop
development has proceeded favorably thus far, with no major weather
problems reported. A good volume, high quality crop was expected.

_Tomatoes
NASS Vegetable Report 1/17 -- Florida acreage is forecasted at 11,000
acres, down 6 percent from last year and 20 percent below 1995. Heavy
rains and strong winds caused by the southern passage of Hurricane Lili
around mid-October increased bloom drop which lowered the late fall and
early winter crop yield potential. Cold, windy weather around mid-November
caused plant dehydration and foliage to burn and break in many southern
localities, but most younger plants escaping significant damage. Mild
weather allowed fieldwork to progress on schedule from the last part of
November through most of the first half of December. Heavy rain at the
end of the first week of December slowed some activity in all southern
areas. Most southern peninsula acreage escaped damage from a winter cold
spell that arrived after mid-December.

__GOOD WEIGHT

Who is Doing the Milking?

Small neighborhood grocers in the Bay Area of California are currently offering better milk prices than the chain supermarkets, according to a survey by Consumers Union. A similar trend is being noticed nationwide.

Retail milk prices vary widely, reaching as high as $3.73 a gallon in San Francisco, despite a 30 cents per gallon drop in California's regulated price paid to dairies to $1.23 per gallon. The $3.73 price represents a profit margin of 204 percent.

Just a few blocks away from the store selling milk at $3.73 per gallon, the Consumers Union survey found a grocer offering the same product for $2.59.

__SMALL CHANGE

Private Farms in Cuba

Some 60,000 Cubans have abandoned their city jobs to become private farmers. The government has opened thousands of acres of idle cropland in order to stimulate its ailing agricultural economy. The land farmed by the private farmers is still owned by the state, but the grower owns and sells his produce. The reform helped boost Cuba's agricultural output by 17 percent in 1996.

RECIPE: Asian Chicken and Noodles
from the National Pasta Association
Serves 4

8 oz. Medium Egg Noodles, uncooked
1 tbsp. vegetable or olive oil
1 pound boneless, skinless chicken breasts, cut into julienne strips (1.5" x .25")
2 carrots, peeled and thinly sliced
1 bunch scallions, chopped
one-half red bell pepper, thinly sliced
quarter cup low-sodium soy sauce
1 cup chopped celery
1 4-oz. can sliced water chestnuts
half tsp. garlic powder
1/2 tsp. white pepper
1 tsp. dried cilantro
2 tbsp. toasted almonds (optional)

Prepare egg noodles according to package directions; drain.

In a large skillet or wok, saute chicken, carrots, scallions and red bell pepper in oil until chicken is opaque and white, about 4 minutes, stirring constantly. Add soy sauce, celery, water chestnuts, garlic powder, white pepper and cilantro. Mix all
ingredients together, cover and simmer for 5 minutes. Stir in cooked egg noodles. Sprinkle with toasted almonds, if desired.

Each serving provides: 307 Calories; 31.9 g Protein; 26.6 g Carbohydrates; 8 g Fat; 84.4 mg Cholesterol; 1155 mg Sodium.

Life After CRP

Although efforts are being made in Congress to extend enrollment, the application deadline for the Conservation Reserve Program (CRP) is March 28.

With thousands of acres now coming off CRP, many farmers are facing tough decisions on what kind of tillage program to employ. Options range from no till (either leaving the land as it is in permanent cover or direct seeding into existing residue which has been killed with an herbicide) to aggressive full width tillage.

Highly erodible land removed from CRP is still subject to conservation compliance, Jim Bauder of the Montana State University Extension Agent Jim BauderService, offering the following advice for post-CRP fields:

> Scout the field to assess the quantity, quality and variety of plants present. The variety of significant grasses, legumes, weeds or brush in the field impacts weed management and can affect decisions on timing of mowing, tillage or herbicide applications.

> Fully consider all pre-plant tillage objectives. These frequently include weed control, incorporating fertilizer, erosion control and seed bed preparation. In some cases, pre-plant tillage will be determined by the herbicide needed.

> Numerous studies have shown that crops planted by means of no-till into alfalfa/grass sod with a fall vegetation kill are comparable to yields in moldboard or chisel plow systems, as long as adequate moisture is trapped and stored during the over-winter period to recharge the soil profile.

> Surface tilth and structure are altered during CRP years. Although full width primary tillage with a chisel plow, disk or moldboard plow changes tilth, it may offer some advantages. Full width tillage helps to level soil, kill vegetation, incorporate fertilizer or herbicide and speed mineralization of nitrogen from surface plants. Soil conditions often are more uniform throughout the field at planting where intensive tillage is
used.

CRP Early-Out

Taking the early-out option from the Conservation Reserve Program may be a good decision on some CRP land, according to Montana State University Extension Soil and Water Quality Specialist James Bauder.

Under current CRP rules, acres released from CRP are not eligible for re-enrollment. The potential profit on the highly erodible land should be considered against the potential for CRP payment in the next Farm Bill. The costs for protecting the land against soil erosion also should be considered, since all highly erodible land released from CRP must be protected from soil erosion to an "alternative conservation system" level.

Landowners requesting early release will be asked by the USDA Farm Service
Agency to contact their Natural Resources Conservation Service office for eligibility questions and to develop a conservation, haying or grazing plan. Using the land for crops, hay, pasture or fee hunting are all options.

Much of the land not suited for crops is not eligible for early out. You cannot get early release for CRP land with an erodibility index greater than 15, land devoted to useful wildlife easements, field windbreaks and shelter belts, lands entered into CRP as grass waterways, shallow water areas, filter strips, bottom land timber on wetlands, or on land within 100 feet of a stream or other permanent water body.

If you do take the early out option, use a soil test to determine nutrient needs. When figuring the economics and the environmental benefits of releasing CRP land, separate the field into areas based on potential yield and erosion potential. If you keep the land in grass, you'll want to consider pasture improvement. Rotational grazing or intensive grazing systems may be a better alternative than row crops.

When seeding into CRP sod, select a crop that is adaptable and hearty. Research shows that fallowing is a wise option in preparation for planting the next wheat crop. It will take a significant amount of time, with a potential loss of moisture, to incorporate residue and prepare a seed bed, unless no till is considered as part of the plan.

No-till may be your best option for controlling erosion and maintaining good soil tilth. However, no-till will require some type of chemical application to kill the existing vegetation. Fall applications of non-selective herbicides are not as effective at killing existing vegetation as spring applications.

Take Me Out to the Ballpark

There's more than just peanuts and crackerjacks at major league ballparks these days. ARAMARK, which provides food service at nine stadiums, is offering Maryland crab cakes for Orioles fans in Baltimore, sushi for Dodgers' fans in Los Angeles and clam chowder for Red Sox fans in Boston. Traditional hot dogs, pretzels and popcorn are also available, of course.

Cooking tips and recipes

Fricassee of Veal with Fiddleheads
from the L.L. Bean Book of New England Cookery

2 tablespoons butter or vegetable oil, or a combination
1.5 pounds veal cubes
2 medium onions -- chopped
half cup dry white wine
1 tablespoon fresh chervil -- chopped or quarter teaspoon dried
salt
fresh ground black pepper
one-third cup chicken broth or veal broth
one-third cup heavy cream
3 cups fresh fiddleheads or 10 oz frozen fiddleheads, thawed

Heat the butter or oil in a heavy casserole and saute the veal pieces lightly for a few minutes. Add the onions and continue to saute, stirring, until they are translucent. Pour in the wine and when it comes to a boil, add the chervil, a little salt and pepper,
and 1/4 cup of broth. Simmer, covered, very gently for about 50 minutes, or until the veal is tender. Check, and if more liquid is needed during the cooking, add a little more broth. When done, stir in the cream.

Meanwhile, cook the fiddleheads in 1 quart of boiling salted water for 5 minutes, or until almost tender. Drain, mix gently into the veal, and simmer about 3-4 minutes more. Taste and correct the seasoning, if necessary.

Make 4 servings.
Serving Ideas : Serve with rice, orzo, or steamed new potatoes.

A Taste for Tropical

U.S. consumers are developing a taste for fresh tropical fruits. Imports of tropical fruits, such as guavas, mangoes, and papayas are increasing, according to a new report from The Food Institute,
"Food Markets In Review: Fresh Fruits." The study shows imports of guavas and mangoes increasing 86.2 percent from 167.9 million pounds in 1992 to 312.6 million pounds in 1995. Mexico was the largest
supplier to the U.S., contributing 81 percent of total imports. In addition, U.S. per capita consumption climbed from 0.25 pounds in 1980 to 0.98 pounds estimated for 1994. Production of papayas in
the U.S., meanwhile, dropped to its lowest point in five years. As a result, imports of papayas jumped 78 percent between 1994 and 1995 to reach 73.4 million pounds.

Carrots with the Most Carotene

While dark, leafy greens, sweet potatoes, and winter squash are all good sources of
Vitamin A, carotene-rich carrots are the best source. But with many standard varieties, it still takes up to two pounds of carrots to meet the minimum daily Vitamin A requirement in a healthy diet.

Plant breeders have boosted carotene levels in carrots over the years and now there are new high-carotene hybrids available that can meet the Vitamin A requirement with half a carrot, the National
Gardening Association reports. Three high-carotene carrots that can be grown in the home garden include:

>Ingot. A Nantes-type hybrid with a sweet flavor. Carotene levels 120-170 ppm.

>Beta Champ.. An Imperator-type hybrid good for juicing. Carotene levels 150-270 ppm.

>Healthmaster. A Danvers-type hybrid with a sweet flavor. Carotene levels 60-95 ppm.

Cloning on the Farm

Cloning probably won't be economically feasible for most farms in the near future, according to Ken Olson, the dairy and animal welfare specialist of the American Farm Bureau Federation.

"The area likely to have the greatest potential is the reproduction of genetically modified individual animals. If an animal has had a gene inserted to produce a unique protein for use as a
pharmaceutical, or for some other purpose, it may be easiest to reproduce an animal with that characteristic via cloning rather than through normal breeding programs," Olson says.

Cloning limits the genetic base of a breed and stops genetic progress. Most agricultural breeding programs are aimed at producing animals that are in some way superior to the parents. With cloning,
there is no combination of genetic material and, therefor, no opportunity for improvement.

The U.S. Meat Export Federation and the National Pork Producers Council are recruiting small and mid-sized U.S. processors to develop new processed pork products for the Japanese market.

"This is a chance for U.S. companies to learn about the Japanese market and capitalize on a significant new business opportunity," says John Cravens, USMEF director of pork programs. "The idea is to
bring U.S. and Japanese companies together to develop new products in the United States that are tailored for Japanese tastes and specifications for export to Japan."

The project began last year with 15 U.S. companies and several Japanese firms jointly developing five processed pork items for export to Japan. The products include:

>Tonkatsu, a battered and breaded pork cutlet;

Georgia. According to a report distributed by Reuters, 900,000 pounds of the tainted sliced and frozen strawberries carry the Hepatitis A virus. No fresh strawberries are involved.

HOW TO MAKE A DOLLY

In a special report on "Cloning," the New Scientist magazine points out that the fusion of a non-reproductive donor cell with an unfertilized egg from which the cell nucleus had been removed to
generate a new and genetically identical organism was a feat many biologists previously believed impossible.

"The fused cell was persuaded to divide to form an embryo that was implanted into a surrogate mother, where it matured into a healthy lamb," the report states.

"For an adult cell to be cloned, it must somehow be made 'young' again. This is the stumbling block that many thought would never be overcome. Dolly is living proof that the changes that occur to DNA
as we grow up can be reversed."

Dolly, the lamb, was born last year near Edinburgh, Scotland. She is genetically identical to her biological mother--her only parent. Her DNA comes from a single cell taken from her mother's udder.

LEFTOVER ADVICE

The Food Insects Newsletter reports that leftover crickets can be frozen for later use. "Use them immediately after defrosting," it suggests. "Handling instructions for using frozen chicken apply
here. The key thing to remember with leftover food insects is that leftovers are not all kept the same way (recall mealworms we advised to you keep live in the refrigerator until cooking). Crickets,
like grasshoppers, are best if the leftovers are frozen."

Plan for more than one season, mixing spring, summer, and fall bloomers into garden.
Position perennials that bloom in the same season throughout the garden so that the color show is distributed, not concentrated
Include foliage plants such as lamb's ears, sedum, and hosta to provide texture and depth
Mix in annual flowers in bare spots.
Plant for vertical as well as horizontal color.

BORER CONTROL

Borers are insects that tunnel under the bark or deep into the wood of trees. Because they damage the moisture and nutrient-carrying layers of sapwood (xylem), borers usually are fatal to a tree.
However, if infestations are found early enough, the tree can sometimes be saved.

This is a good time to look for signs of borer activity on tree trunks and limbs, before they are obscured by leaves. "Look for small holes, usually one-quarter inch or less in diameter, that have
sawdust falling from them or that ooze sap," says Montana State University Extension Urban Pest Management Specialist Sherry Lajeunesse. "Sawdust on the tree trunk or ground should also alert you.
If you find clean holes that are not packed with sawdust, the adult insect emerged last summer and is gone, perhaps after laying another batch of eggs on the tree. Holes with sawdust indicate the
immature borer is still feeding in the tree."

If the tree is heavily infested, your only recourse may be to have it removed before the pests spread to other trees, Lajeunesse suggest. If there are only a few borers, chemical control may be an
option if it is used at the right time.

On trees with few borers, Dursban 4E should be applied according to label directions. Two or three applications will be needed, spaced through the growing season with the first application in early
April.

"Controlling borers using pesticide sprays is difficult because the pests are vulnerable for only a short time," Lajeunesse points out."Adult borers lay eggs on the surface of the tree bark and in
crevices where they may be difficult to see. When the larva hatches, it immediately starts to chew its way through the bark and into the sapwood.
It is only vulnerable while it is penetrating the bark. If you don't get the spray into the crack or crease at the right time, your efforts won't work."

Another chemical treatment option is to have a professional tree care company apply insecticides using a method that injects or implants insecticides directly into the tree, where they are carried
via the outer layers of sapwood to other portions of the tree, killing borers which ingest the material. Injections work only for borers that remain near the most recent growth increments, such as
bronze birch borers and bark beetles. Injections are ineffective for borers that penetrate deeply, such as the poplar borers.

"A third option is a biological control product called BioSafe, which contains beneficial organisms that attack some insect pests," Lajeunesse notes. "However, it has not been scientifically
determined whether the organisms attack some of our common borers. They will attack the poplar borer and several others. If you have no other options, you may wish to experiment with this product."

LESSER-KNOWN LEGUMES

Tired of the same old string beans?

Here's a few lesser known -- or lesser grown -- legumes for the home garden:

Fava. Also known as the English broad bean. Good for spring planting and harvesting, as they thrive on cool weather (hardy down to 10 degrees). Its rich, meaty flavor is perfect for stew. Favas are
second only to soybeans in protein content. Plant again in late summer. for a fall and winter crop.

Summer Peas. Also known as known as southern peas, black-eyed peas, cowpeas and crowders. Good for summertime cultivation, as they do well in the heat. Sown in late spring following English garden
peas or sugar snaps, which stop producing by mid- to late-June, summer peas arel ready to pick in September.

Pike's Place

Of the 10 produce stands at Seattle's famous Pike's Place Market, only two reported a sales increase in 1996 over the previous year, according to the Pike Place Market Preservation and Development
Authority (PDA), and some produce vendors now want to to sell juice, T-shirts, salad dressing and sauces along with their raw vegetables.

Altogether, the 161 businesses in the Pike Place Market's 161 vendors posted a modest increase in sales in 1996, but almost half reported a decrease in sales from the year before, according to PDA
statistics.Those with the greatest increase in sales were the market's four fish stands. Butchers, stationers and jewelers had the slowest sales.

"Our strength is our expertise and our reputation," Roy Feiring, director of marketing with the PDA, told the Puget Sound Business Journal. "Whenever there's a food scare, Market people do well
because they spend more time talking to customers and gaining additional business."

To a 2-L jacketed round reactor vessel (reactor #1) with an overall heat transfer coefficient of about 100 Btu/F-ft2-hr, add ingredients one, two and three with constant agitation. In a second 2-L
reactor vessel with a radial flow impeller operating at 100 rpm, add ingredients four, five, six, and seven until the mixture is homogenous. To reactor #2, add ingredient eight, followed by three

first order rate expression (see JACOS, 21, 55), or until golden brown. Once the reaction is complete, place the sheet on a 25C heat-transfer table, allowing the product to come to equilibrium.

CLEANING FRESH PRODUCE

Fresh strawberries now in markets are not tainted with the hepatitis C virus found in frozen product delivered to schools in several states. A quick rinse under cold water is all that's needed to
ensure their food safety.

All fresh produce carries small particles of dirt and bacteria that should be removed before eating. Soak briefly, then rinse in water, making sure that the water gets to all the folds in the fruit.

Apples, green peppers and other items with thicker skins can be scrubbed with a vegetable brush for extra cleanliness.

Peeling fruits and vegetables reduces risk, but produce should still be rinsed beforehand. Hands or knives can transfer contamination to the inside of the food.

REAL JUICE OR JUST A FLAVORED DRINK

Per capita juice consumption in the U.S. is four times higher than it was in the
mid-1970s, but are all those expensive new drinks with the appealing labels and clever names really juices?

Lynn Paul, extension nurtitionist at Montana State University, offers the following guidelines to determine whether a product is really juice, and whether it's worth the money and calories.

First, what is the serving size listed on the label? The serving size is based on the typical amount consumed. Next note the "percent daily value" column. This tells what percent of your daily needs
for this nutrient you would get in a serving. The percent daily value for vitamins A, C, calcium and iron will appear on most labels. I recommend that you buy juices that have close to 100 percent of
your daily need of vitamin C per serving. If the label shows very little or no vitamin C, make another selection. It is more economical to make choices that will boost your vitamin C for the day
while it quenches your thirst.

Juices packed with vitamin C may have water and sugar listed in the ingredients. Juices naturally contain water and sugar. Some juices, such as orange juice, do not require additional water or sugar.
Other juices from very tart fruits such as cranberry or grape may require sweeteners to be palatable.

ECO-LABEL DEFINED

How do you know when a product is grown or produced organically? What does the term "certified organic" really mean? In its April issue, Delicious! magazine offers the following definition:

"Certified Organic. 'Certified' means that farmers and processors undergo annual third-party inspection to verify organic growing methods. 'Organic' signifies food produced under an ecological
production management system that promotes and enhances biodiversity, biological cycles and biological activity in the soil. The organic designation is based on minimal use of off-farm inputs (such
as synthetic fertilizers and pesticides) and on management practices that restore, maintain and enhance ecological harmony... National organic standards, mandated as part of the 1990 Farm Bill, are
predicted to be available in 1997, according to the U.S. Department of Agriculture."

LATEST ANTIOXIDANT: LICORICE

Scientists at the Technion-Israel Institute of Technology have discovered an ingredient in the root of the licorice plant that prevents the build-up of cholesterol in the arteries. The ingredient,
glabridin, delays the oxidation of low density lipoprotein (LDL), or "bad" cholesterol, a main contributing factor to increased cholesterol build-up on arterial walls that leads to arteriosclerosis.

Licorice works as an antioxidant by trapping the free radicals that cause oxidation, resulting in a reduction of the build-up, according to Michael Aviram, professor
of biochemistry and medicine, who warns against eating large amounts of licorice candy. Aviram described the licorice used in the candy industry as a watery extract from the licorice root that does
not contain glabridin. "The active ingredient is found in the parts of the root that are thrown away after industrial production of candy," he said.

TV COOKERY

The first TV cooking show appeared in 1946, according to a report in The Austin Chronicle, with James Beard in front of the stove. The next year, CBS introduced "The Queen's Taste" with Dione Lucas.
Julia Child made her debut on Boston public television in 1963.

In recent years, cookery programming has proliferated to the point where it now has its own cable network -- TV Food Network. Cooking instruction programs are popular on many cable stations as well
as broadcast networks. See our What's Cooking on TV? guide for listings of most major programs and the menu items for each day's programming.

As food preparation becomes more popular as a form of entertainment, showmanship is becoming as much or more important as cooking skill, the Chronicle reports, quoting Geoffrey Drummond of A La Carte
Communications, producers for Julia Child and The Frugal Gourmet programs: "Just because you're a really terrific chef doesn't mean you're going to be a top TV personality. People respond to energy,
empathy and confidence."

1 1/4 lb. bag of oreo cookies
1 8oz pkg cream cheese
1/2 stick butter
2 tbsp confectionary sugar
3 1/2 cups milk
1 3oz.pkg vanilla instant pudding mix
1 large Cool Whip

Bowl #1
In blender, crush cookies very fine. (set aside)

Bowl #2
Cream together butter, conf. sugar, and cream cheese (set aside)

Bowl #3
Mix together milk, pudding mix, and Cool Whip till blended. Add Bowl #2. Blend well with mixer.

In 8” “Flower Pot” or casserole dish, start with layer of cookies- alternate with pudding. Last layer 1” oreo “dirt” Add artificial flower for decoration.

RECIPE: Good Morning Coffee Cake
from the Crisco Kitchen

Cake:
2-1/3 cups (575 mL) all-purpose flour
1-1/3 cups (325 mL) granulated sugar
3/4 tsp (3 mL) salt
3/4 cup (175 mL) Crisco Shortening
2 tsp (10 mL) baking powder
2 eggs
1 tsp (5 mL) vanilla

Filling:
1 pkg (8 oz/250 g) cream cheese, softened
1 can (300 mL) sweetened condensed milk
1/3 cup (75 mL) lemon juice
1 tsp (5 mL) cinnamon
2-1/2 cups (625 mL) sliced-fresh or canned peaches

Topping:
1/2 cup (125 mL) chopped nuts
1/3 cup (75 mL) lightly-packed brown sugar
1 tsp (5 mL) cinnamon

Cake:

Preheat oven to 350°F (180°C).

Combine flour, sugar and salt. Cut in Crisco until crumbly. Reserve 1 cup (250 mL) crumb mixture for topping. Add baking powder, eggs and vanilla to remaining crumb mixture. Beat on medium speed of
electric mixer for 2 minutes, or until smooth. Spread evenly in greased 9 x 13-inch (3.5 L) cake pan.
Bake at 350°F (180°C) for 20-25 minutes

Filling and Topping:

Beat cream cheese on medium speed until smooth and creamy. Gradually add sweetened condensed milk, lemon juice and cinnamon, beating until smooth.

Fold in peaches. Spread evenly over cake.

Combine reserved (1 cup/ 250 mL) crumb mixture with nuts, brown sugar and cinnamon. Mix well. Sprinkle over filling. Bake at 350°F (180°C) for 30-35 minutes longer, or until set.

Serve warm. Makes: About 12 servings

University of California-Davis chemist Takayuki Shibamoto has discovered
cancer-fighting antioxidants in freshly brewed coffee. Shibamoto
preliminary study, presented at the national meeting of the American
Chemical Society, suggests that the antioxidants in the coffee might be
equal to the amount found in three oranges.

Internet to sell more than half its produce by subscription to
health-minded consumers.

The farm's customers sign up to receive a basket of vegetables every week
for one to three months. A calendar on the farm's Web sit helps them
select months in which their favorite crops are available.

To place an order online, customers select from a menu of available
produce and fill out an order blank, including instructions on where and
when to deliver.

Customers can also use the Web site to make requests of the farm to grow
certain crops or varieties.

AERATION: GOOD FOR THE SOIL

Aerating soil is good for the soil in your lawn. Compacted or damp soil
often results in turf diseases, thatch, weeds or other pests that thrive
in these conditions. Aerating is one way to change your soil conditions,
ensuring that your soil has plenty of air, microorganisms and good
drainage.

To determine whether your turf grass needs aerating, use a spade to cut a
square-foot section of turf, cutting down at least six inches. Lift the
section out. If the roots extend only into the first two inches of soil,
it is probably compacted. If the roots
extend four to six inches or more, the soil probably is in good shape and
aeration is probably not needed.

If you need to aerate, you can rent aerators that remove plugs of soil
about one-half inch in diameter and several inches long. Plugs that are
four inches long or longer do the best job. Other types of aerators push
tines into the soil without removing a plug. These are not as effective,
because they cause compaction around the holes when they displace the
soil.

Small areas can be aerated with a spading fork.

After aerating, top dress with a half-inch layer of finished compost. This
will work its way into the holes and soil, improving soil by adding
organic matter and microorganisms, helping to loosen compacted soil over
time. Top dress again later in the season, because in our harsh climates
and often heavy soils, two or three top dressings each season will be
needed to make any difference.

TOXIC PLANTS

Nature is not always benign. Some yard and garden plants are poisonous to
people and animals. There's no simple answer about which plants are
poisonous, because people and pets can react to plants differently, says
Bob Gough, horticulture specialist with the Montana State University
Extension Service. If you have small children and pets, you might want to
be on guard for possible problems with certain plants. Some of those
plants are listed below.

CANCER-FIGHTING FOODS

Research on the effects of certain foods on the incidence of cancer was
reported at the recent annual meeting of the American Association for
Cancer Research, including these findings:

Orange juice protects lab animals at the University of Western Ontario
from cancer. A particular limonoid called nomilin inhibited cancer in the
test tube.

Red meat eating women in Missouri studied by the National Cancer Institute
were twice as likely to get lung cancer, but diets of fish and chicken had
no apparent impact.

Soy concentrate fed to mice with bladder cancer at the Beth
Israel-Deaconess Medical Center in Boston appeared to inhibit tumors.

Pasta-eating rodents at the University of Florence exhibited a lower risk
of getting precancerous polyps associated with colon cancer.

The top 10 cancer-fighting foods, according to Men's Health magazine, are:
1. Broccoli. 2.Tomatoes. 3.Spinach. 4.Oranges. 5.Garlic. 6.Apples.
7.Soybeans. 8.Carrots. 9.Hot red peppers. 10.Green tea.

A fellow driving down the road came upon a farmer corralling hundreds of
sheep for transport to market. The fellow got out of his car, went up and
chatted with the farmer.

"I'll bet you one of your lambs that I can tell you the exact number of
sheep you have in the corral," the stranger said.

The farmer, not believing this was possible, said, "Sure."

The stranger looked over the corral for a moment, turned to the farmer and
said: "463."

The farmer, who knew the count himself, was astonished.

"Well, a deal's a deal. Go pick out your lamb," he said.

As the fellow was on his way back to his car, however, the farmer yelled
out, "Double or nothing, I bet I can tell you what you do for a living and
where you work."

The stranger said, "Okay. Go ahead."

The farmer told him, "You're an economist and you work for the government
in Washington, D.C."

This time it was the stranger who was astonished. "How'd you know?" he
asked.

The farmer replied: "Well, you go ahead and put down my dog and I'll tell
you."

>Paper bags. Grocery bags weighed down with soil or stones.

>Tin cans. Large cans with both ends removed, and the top hole covered

Dr. Temple Grandin, an expert on livestock psychology, makes the following
safety tips and observations for workers handling livestock in corrals or
transport:

> A single, lone, agitated steer is very dangerous.
> Escaped cattle must never be chased. A loose animal will return to the
stockyard if it is left alone.
> Stay out of the blind spot behind a steer's rear end. If he cannot see
you, he is likely to kick you.
> All species of livestock will move forward if the handler stands behind
the point
of balance, which is at the animal's shoulder. They will back up if the
handler stands in front of the point of balance. Many handlers make the
mistake of standing
in front of the point of balance while attempting to make an animal move
forward in a chute.
> Livestock will naturally follow the leader. Animals will move more
easily into a single file chute if it is allowed to become partially empty
before attempting to fill it. A partially
empty chute provides room to take advantage of following behaviour.

LOW-FAT MOZZARELLA

Research scientists at Kansas State University are studying new ways to
process loiw-fat mozzarella cheese. "We are trying to replace some of the
milk fat in the mozzarella cheese with soy proteins," says dairy
technologist Karen Schmidt. "We are taking a product that has nine
calories per gram and replacing it with a component that has four calories
per gram and is lower in fat." The research project is 70 percent
complete, but has some huge hurdles to overcome -- some color
characteristics are not the same as the real mozzarella cheese product.

AFRICAN AMERICAN HERITAGE COOKBOOK
Traditional Recipes and Fond Remembrances from
Alabama's Tuskegee Institute
by Carolyn Quick Tillery (Birch Lane Press, 1997)

Tuskegee is the sleepy southern town where former slave Booker T.
Washington came to teach at a school for blacks in 1881 and eventually
created the first famous black educational mecca in America, the Tuskegee
Institute.

Cookery was an essential subject at the school, not just in the classroom
but in the day-to-day lives of the impoverished sharecroppers the school
was set up to educate. George Washington Carver, an acomplished cook as
well as a scientist, shared recipes with the wives of the farmers he was
teaching new methods of agriculture.

This volume, compiled largely from records in the Library of Congress, is
both a cookbook and an historical reference. Along with recipes for
pickled beets, Creole rice, spoon bread and roast suckling pig are rare
vintage photographs of the school and its community. Quotes from the
writings of Washington, Carver and others influenced by the school are
scattered throughout the book, adding color to the rich aroma of barbecued
chicken, creamy mashed potatoes, fried corn and peanut cake.

Carefully planned in advance, a Cinco de Mayo party can be as much fun to
prepare for as it is to attend. Barbara Hansen of the Los Angeles Times
offers a complete menu for the holiday in the newspaper's April 30 issue,
providing recipes and instructions for preparing Punta Morro, Queso
Serrano, Tri-Tip with Tomatoes and Peppers, Jalapeno Cheese Stuffed
Potatoes, Strawberries in Merlot and Ancho Chile Brownies in advance. Her
agenda for the party goes like this:

>Day before or morning of party: Cook beef. Cool in baking pan, cover and
refrigerate. Make brownies; cool and wrap airtight.
>Morning of party: Make chile-mushroom sauce for appetizers; refrigerate.
Prepare stuffed potatoes except for final baking, cover and refrigerate.
Make Merlot-strawberry sauce for ice cream; chill.
>Afternoon of party: Slice fruit and vegetable relishes except for any
that discolor when exposed to air.
>Two hours before serving: Remove beef and potatoes from refrigerator and
allow to come to room temperature.
>One hour before serving: Start reheating beef.
>40 minutes before serving: Bake potatoes.
>When guests arrive: Slice baguettes, spread with chile-mushroom sauce,
top with cheese and broil.
>Last minute: Arrange relishes on serving platter. Slice meat and arrange
on platter; spoon salsa over slices. Arrange potatoes on separate platter.
Pour beverages.
>After main course: Spoon strawberry-Merlot sauce over ice cream. Arrange
brownies on serving dish. Make coffee.

__SMALL CHANGE

A CUPPER OF COFFEE?

England, with its traditional afternoon cup of tea, remains the world's
largest importer of tea leaves, importing more than 400 million pounds per
year. The average British citizen drinks seven pounds of the brewed liquid
each year compared to less than a pound per capita in the U.S.

But coffee is infiltrating the citadel of tea, according to a report in
the Orange County Register. Coffeehouses an espresso bars have opened all
around Britain and many shops now offer take-out coffee in styrofoam cups.

While recent government surveys prove that Brits drink more tea than
coffee, they are nevertheless spending more on coffee because of the high

LESS BEANY SOYBEANS

A team of Iowa State University researchers hopes to increase food market
demand for soybeans by eliminating their "beany" taste. With support from
the Iowa Soybean Promotion Board, researchers have developed soybeans that
lack the typical beany flavor. A milder taste is preferred for products
such as tofu, soy milk and soy flour.The ISU scientists are evaluating
the suitability of the new soybeans in tofu, soy
milk, baked goods and meat extenders.

BEATING BINDWEED

Field bindweed, also called morning glory and creeping jenny, is a
perennial that can be a persistent problem in gardens, flower beds and
other parts of the yard. The plant can grow along the ground, with stems
up to 10 feet long, or it can climb like a vine. Its blossoms are white or
pink and shaped like a funnel. It reproduces both by seed and by creeping
roots.

With a deep root system, extending as far as 25 feet into the soil,
bindweed cannot be controlled by simple pulling or hoeing unless all
shoots are removed over a period of several years. Tilling the weed every
three weeks through one complete growing season will deplete the root
system enough to allow a garden crop to be planted the following year.

Herbicides are often used to control bindweed in areas where it is
well-established . Spot applications of glyphosate herbicides, such as
Roundup, are recommended by county Extension agents. Although glyphosate
is of low toxicity, it is also non-selective and will kill any plant that
it touches. Only small amounts are required to kill a weed.

Also effective against bindweed is a premix of herbicides containing
dicamba, such as the Trimec products. Dicamba can be very damaging to
woody ornamentals, including trees, so label instructions must be followed
very carefully.

And although many herbicides containing 2,4-D are labeled for field
bindweed,
this herbicide is not as effective on some infestations.

ATTRACTING HUMMINGBIRDS

Hummingbirds not only add grace and beauty to a garden, but they also help
pollinate many plants. To attract them, plant plenty of their favorite
nectar plants. Their absolute favorites include:

bee balm (Monarda didyma), trumpet vine (Campsis radicans)
red penstemon (Penstemon barbatus)
red trumpet honeysuckle (Lonicera sempervirens)
cardinal flower (Lobelia cardinalis)
fire pink (Silene virginica)
red sage (Salvia sp.)
red columbine (Aquilegia sp.)
jewelweed (Impatiens capensis or I. pallida).

Hummingbirds even have a favorite vegetable, the scarlet runner bean
(Phaseolus coccineus).

Provide a shallow watering hole for hummingbirds to bathe in and plentiful
resting perches in the form of trellises or bare twigs around their
favorite plants. And to encourage Mama hummers to nest in your garden,
plant a few pussy willows nearby. They like to use the soft fur in the
construction of their nests.

The U.S. Department of Agriculture is restricting the importation of pork
and pork products from Spain because of the detection of hog cholera, a
highly contagious viral disease of swine, in that country. "We have taken
immediate action to protect U.S. livestock from this deadly disease," said
Joan M. Arnoldi, deputy administrator of veterinary services with the
Animal and Plant Health Inspection Service, a part of USDA's marketing and
regulatory programs mission area. "We will continue to monitor the
situation in Spain closely."
