Coffee cake, esp with mock-almond butter icing, lots of almonds or
walnuts for extra garnish
Also orange or lemon or passionfruit cake with a fresh tasting butter
icing. Yep, fattening. Esp nice in cupcake form with butterfly wings
and a fruity syrup or made with ground almonds or such.mmmm...
> (nb recipes welcome)
> -What cake do you remember fondly from childhood, like the kind old
> ladies serve up for tea, but

Lemon Poppyseed cake.
The old-fashioned gingerbread cake made with treacle that looks more
like a loaf and dusted with icing sugar.
And a more-often tasted one I have never quite mastered is Date-loaf
> -What cake have you seen pictures to drool over but never actually
> tasted but wished you had?
Actually quite a few. Like some of those more cheesy kinds of ones with
sponge soaked in alcohol and grated chocolate and such.
> -What is your own best never-fail recipe?
I have a good one for a sponge type cake that can be adapted to diff
flavours but has occassionally failed when combined with instant
coffee. Also a good chocolate ground almond cake, v moist and soaked in
liqueur of choice

Either pretty pink roses on the tea pot and cups etc or plain pretty
colours with wide bowls for the cups and white or creamy coloured
interiors. Big vase of flowers on the table, maybe peony roses or
hydrangeas.
> and creamer, cake plate and...
> * describe the cakes/delicacies arrayed
Flowers and bees on the cake plate. White linen or damask cloth,
crisply pressed. Definitely the orange cupcakes with little pink icing
flowers. Maybe the lemon poppyseed cakes. Nut caramel tarts. Black
currant squares(dusted with icing sugar).
If it was X-mas I would have little coconut macaroons with red or green
glazed cherries, pastry 8's with sugar crystals stuck to their glazing,
x-mas cake with an apricot leaning, Turkish coffee cake (spicy,
non-iced with hazlenuts and sourcream), possibly ginger bread and/or
tai tai. Marzipan either coated in chocolate, or pastry and glazed with
jam and cherries. Chocolate coffee beans, and/or chocolate -coated
orange peel.
> -What is your least favourite cake?
Probably banana, and biscuits like shortbread or malt.
Some banana cakes are nice. Had a nice one once with yoghurt and sour
cream added.
Badly made chocolate cake. I luv chocolate, but most chocolate cakes
are not worth eating.
> -What is the most surprising cake you have ever eaten?
Hard to say. Had a tart once with low-sweetened chocolate once. It was
very nice. I think there is a tendency to put too much sugar in
chocolate, or worse too much vanilla. I prefer chocolate not too sweet.
Also a Greek cake. I'm not generally a big fan of coconut but this cake
was extemely nice.
> - Ok, and what is your absolute utmost favourite cake of all time?
Gosh! This is really hard. I think I'll have them all!
Ok, I'll take the lemon/orange cake with the butterflies.
I really can't think of one.
> -What is your own best never-fail recipe?
The closest grocery store with a good bakery. :)

I would use a blue and white toile china pot with the generous spout. The
cups would Blue Willow, instead of the usual mugs I favor. I would use my
grandma's silver sugar and creamer. The cake plate would be a Blue Willow
pattern that matched the cups. Cakes would be ladyfingers, scones
(preferred blueberry), and fresh fruit compote. The day would be warm, but
not hot, and I would set everything up on the back patio.
>
> -What is the most surprising cake you have ever eaten?
I remember a lemon tart my aunt used to make. Usually lemon is something I
like in small, less intense bites, but this was incredible!
> - Ok, and what is your absolute utmost favourite cake of all time?
Red Velvet Cake...oh my! Actually, my favorite cake is the first cake my
girls made for me. It was lopsided and held together with toothpicks but
they made it themselves (12 and 9) and I loved every morsel. It was a spice
cake from a box, but no matter, it was wonderful!

Hey, I made cookies and my sister said they tasted like sugar. I liked them
so I guess I have a sweet tooth.
OK, I wasn't a teenager yet and when the parents are gone the mice will
play. That was right after I brought the pony colt into the house. It
seemed funny at the time and he wasn't too cautious. It was just a quick
tour not like the kids who took a goat upstairs in college and left him on
the second floor of the dorm. No one could figure out how to get him back
down right away so he spent two days up there. Housekeeping was not happy.

My grannie and my mom made some of the best chocolate and/or vanilla
cakes made from scratch that were great with the home made frosting on
top.
My mom also made a wonderful jello cookie cake with flavored jello in
it and tons of fruit as a great treat on special sundays or as a treat
for holiday dinners.
Then there was the zuchinni loaves my mom would make in the fall. Don't
have thons any more though due to Will's allergy.

> -What cake have you seen pictures to drool over but never actually

I have some great books on cakes decorating showing gorgeous cakes with
rolled icing on them and fantastic flowers and figures and stuff on
them that makes them almost as much a peice of art as a wonderful thing
to eat. There's also some other cook books I have on many wonderful
homey recipes for cakes and cookies wiht a bit of a '50's or '60's feel
to them. Would like to try making some of those recipes up if I ever
find the time to whip them up.
> -What is your own best never-fail recipe?
I often will start with the packaged store bought cake mixes and add
in a few extra things to make them a tad more moist, richer, and nicer.
(Some pudding mix help make them fuller and richer.)
I do have the old family recipes if I care to make any completely from
scratch.
There is also the jello cookie cake recipe and the zuchinni recipes I
have. I think I shared those in the past. If anyone is interested,
please let me know.

My tea would be a bit whimsical with tea cups with purple and blue
lotus type flowers on them (part of a larger complete set) or the cups
with the strawberries on them if it was just a small group. I have a
real cute ceramic tea pot that has different fruits on it that looks so
neat and would be great of such an occasion and a set of cute small
spoons perfect to stir a cup of tea without ending up with too much
sugar in the cup. I have a red table cloth and a gold on too and that
would be great on the picnic table in the summer. I also have a cute
silver sugar bowl with a lid for the sugar to keep out any bugs with a
sweet tooth. I'd have an array of little tarts, treats, danties,
macaroons, and such on trays to enjoy, or kept under a clear glass cake
stand with a cover to keep safe from any pests until we are ready to
enjoy them. Add in many planters full of blooming flowers around
during a warm sunny summer day with a tree or two giving some gentle
shade to enjoy the party in leisure and it's all set to enjoy.

A flavored cheese cake.
It was so good I had to have seconds.
There was also a birthdya cake I had one year that had raspberry juice
used to make the icing and raspberries in the center layer of it. It
was so good and the best b-day cake ever. :)

Super duper holiday pumpkin loaf.
Any kind of cheese cake.

berry fruit on top?

People have a tendency to forget to put into recipes things they don't
care for. I used to know someone who worked as a cook, but she had no
sweet tooth and she often forgot the sugar. However if you forget the
flour.... wel not only is it very sweet, but it can also leave a sticky
black mess after it drips off the tray. Personally if there is anything
I leave out of recipes it is salt.

No piccy!
Is shortening better than butter for this? What does the viengar do?
Thanks for recipe. Colour sounds right for X-mas. Guess green might
work too.

I was the skinny kid who didn't like to eat anything. Oh, I ate,

never much. So I got to taste everything

As a kid, my Grandma on my Mom's side had just such a setting that she
and I would use (no granddaughters, so I was elected at times.
It was very small, pattern was white with blue flowers. The tea was
chamomile served with sugar. The pastry has been pizzels, strudel,
coffee cakes, angel wings, paunchke, so many wonderful items and
memories.

Marzipan, it sounds more magical than it tastes.

I think it is the white layer cake with white frosting, although,
Italian wedding cake is very good, as is carrot cake.

Oh My!
I am totally out of the closet and admit, I love fruitcakes. Not
because I resemble them, or I am as wierd looking as one, but because I
love all kinds of dried fruit.
Sir Dave
Neither. Picture a cake in the shape of a donut or automobile tire.
Imagine that cake made of sticky stuff filled with little pieces of fruit
from cherries of various colors to peach pieces and who knows what other
fruits. Very sweet, very sticky, good for eggnog made with plenty of sugar
so it is even sweeter. Eggnog has sugar and eggs and milk and cream all
mixed together.

I am not sure there is a need for salt in most things. It occurs naturally
enough to provide us with the salt we need in our blood and many prepared
foods have so much salt you have to spend half the night drinking water to
get rid of the taste.

Yes, she is quite a woman.
She is in a nursing home now so we send each other cards for birthdays and
holidays. She used to have lots of gardens and canned stuff but she grew up
and raised a family when most people did their own canning with the racks
and kettles and jars and things. Running water used to run into a tank in
the house and was dipped out with a dipper as needed and heated on a wood
stove. The extra cold water ran out through an over flow pipe.
Most houses had an outhouse until the 40's or 50's when indoor bathrooms
began to be the in thing and many homes had a compost pile for plant
materials as an easy way to dispose of the stuff. Tomatoes and peach trees
and other fruit trees and vegetables would grow there from the thrown away
seeds. Peaches need a period of cold before they will sprout so the seeds
would be frozen over winter and sprout the next spring and could be picked
up off the compost pile roots and all and potted. Something fun for kids to
do.
Of course those were the times when lead water pipes were the norm and no
one knew there was anything wrong with lead paint or asbestos and there were
still some wooden pipes around.
Wooden pipe - think of a bunch of wooden wine barrels put together end to
end with a taper on one so it fit inside the next one and the whole thing
covered on the outside with tar before it was burried to protect it from the
soil and rot.
Yup..love mom's fruitcake..It's the best..as well as her persimmon
pudding with lemon sauce.
