2 cups flour
half teaspoon baking powder
three-quarters teaspoon salt
two-thirds cup butter or lard
4 to 6 tablespoons cold water
Mix and sift dry ingredients. Cut in shortening
until mixture is like coarse meal. Add only
enough water to bind together. Roll out thin on a
lightly floured board. Line pan and fill with a
cooked fruit mixture (cheese mixture). Cover
with interlacing strips and bake in a quick oven
for 10 minutes. Continue baking in a moderate
oven for 20 minutes.
Anise may be sprinkled over just before serving.
