~ ANY thing in here is 'fair game' for deletion, inclusion,
substitution, etc.
~ In 'change', one of the 'easiest' is the cheese TYPE _and_ STRENGTH,
followed directly by the same for 'bread(s)'.
~ Even though you might NOT think it 'necessary'; it is often in your
best interest to 'substitute' for 'healtier' ingredients when possible
(unless you simply 'must' have the _original_)..

San Antonio Skillet Supper SR

2 lb smoked sausage or Kielbasa
1 cup white rice
1 (14-1/2 oz) can stewed tomatoes
1 cup water
3 cup Picante Sauce
1 (8 oz) can dark red kidney beans

Cut sausage in 1/2 lengthwise, cut crosswise in 1/4 " slices. In 10"
skillet, combine rice, sausage & remaining ingredients; mix well,
breaking up tomatoes with lg spoon. Bring to a boil. Reduce heat, cover
& simmer for 20 min.
Remove from heat, let stand covered 5 min. Top as desired; serve with
additional picante sauce.

Prep Note: ~ to 'Regionalize' this a bit more, serve with warmed flour
tortillas. ~ Consider adding some shredded cheese of choice, either on
top or mixed into the dish.
