The built in MIC's connections are threaded to the Springboard port and
nowhere else. You need to rephrase your question in the direction of
designers of Springboards capable of recording (none yet existing or
planned AFAIK).

You're half right. A springboard is required to even access the mic.
However, there are three products in various stages of development and
availability that will do this.

What I really want to know is whether any of these products allow me as
a programmer to gain direct access to the sound samples. No one has
been particularly helpful along these lines yet. I haven't been able to
find any information on this topic. I am beginning to get suspicious
that people don't want to ask or something.

There are in fact Springboards planned for this very purpose.
InnoGear's SixPack, the MiniJam, the my-Vox HS1...I'm sure there are
others I can't remember off the top of my head
