Ultra DMA Mode

I'm using Asus P3B-F and P4T motherboards that have a setting for Ultra DMA
Mode on the Main Menu of BIOS. The manual states that this capability
allows improved transfer speeds and data integrity for compatible IDE
devices. The configuration options are: 0, 1, 2, 3, 4, and disabled
(default).

Which settings are appropriate for IBM 46.1Gb DeskStar 75GXP Ultra ATA/100,
and 61.4Gb DeskStar 75GXP Ultra ATA/100 drives? Also, Maxtor 30.7Gb UATA/66
and Western Digital 20.5Gb UATA/66?

These should all work fine at your max of UDMA mode 4.

I've put two IBM DeskStar 75GXP hard drives in my P3B-F machine. When I
enter BIOS to set the UDMA mode, "Auto" sets the hard drives to mode 2, for
"User Type HDD" there are only four choices available: 0, 1, 2, and
Disable. The manual states there should also be 3 and 4 as choices. Where
have these other choices gone and how can I set the mode to 4?

Using BIOS v1006.

This might be caused by using a 40-wire IDE cable. Try an 80-wire
cable; one probably came with your 75GXP if you bought a boxed
(retail) HD.

Doesn't BX chipset only support UDMA2?

Use Auto. UDMA 2 is right.
