AFAIK there's no (easy) way to change default save folder for notepad,
but it's possible to create shortcuts to the most often used folders. To
do that one shoud create /expand/ registry key
HKEY_CURRENT_USER\SOFTWARE\Microsoft\Windows\CurrentVersion\Policies\ComDlg32\Placesbars
and create here string values Place0, Place1, Place2, Place3, Place4...
Now one can define shortcuts that will be shown in "save as" dialog box:
Place0=C:\My Folder\Files
Place1=C:\Photos
