I'd like to use fulltext/"natural language" searching with
"match"/"against". I'd like to use this to find the relevance of a string
match.

But I think the "against" function can only be used with a literal value,
and not a field/column. How can I get the relevance for a field/column?

Do I need to create a querystring in PHP, containing the value of the field
column? Is there some relevance function I could use?

It's been almost a year since someone posted here. I suggest you post
your question in comp.databases.mysql instead. The traffic is low there
as well, but there is at least a couple of posts per week
