Our bathroom ceiling was badly pitted and paint was peeling. So I did a
good job of scarping patching. Let it dry for a week and then primered and
put one coat of paint (that was last week). Now I am wondering if putting
more coats of paint will make it last longer. If it does help, I would
gladly put 2 more coats. Or it will eventually start pitting and peeling
again, and I will end up with deeper pits? Any ideas?

Correcting what was causing the peeling is the key not how many coats you
put on. If you have a leak from above no amount of coats will stop the
peeling untill the leak is stoped. More coats are really just for a smother
appearence.

I think the key here is the room is a bathroom. Does the bathroom have
an exhaust fan? The high humidity of showers can cause a host of
problems. An exhaust fan that goes on when the light is on your best
bet

The best thing to do is use a top quality paint like Behr Premium from
Home Depot.
