Having a limited number of routers/interfaces to practise with, i was wondering if it is possible to use loopback interfaces as a means of simulating networks for the purpose of summarization/etc.

Sure can. In fact it's often easier to do this unless you you need a host for checking helper addresses or ACL's etc

eeyup. you can use it as a regular interface (allmost). you can ping from it (extended ping), ping to it, and have your router summarize all loopback interfaces (and most other regular interface stuff)
