Hot Cocoa Mix

If you can find the powdered whole milk in the Mexican food section at
WalMart, this could be even richer... Much better than the mixes made
mostly with non-dairy "creamer".

HOT COCOA MIX

1 1/2 C white chocolate chips
3 C powdered milk
2 C powdered sugar
1 1/2 C Dutch process cocoa
1/4 tsp salt

Process white chocolate in food processor or blender until chopped fine
and no large pieces remain. Empty into large mixing bowl, add remaining
ingredients and stir until well mixed. Process mixture in batches in
food
processor or blender until it's a very fine powder. Empty each
completed batch into a second large bowl as you go; then mix well to
assure even distribution of ingredients. Store in air-right container.
YIELD: about 20 cups of cocoa
HOT COCOA:

1/3 C mixture in 1 C very hot water, milk, or half-and-half, 1/8 tsp
vanilla. 1 serving.

Maximum Mocha: Add 1/3 C mixture to very hot black coffee. (Enough
caffiene to keep you awake all night.... better in the morning for that
reason.)
