I like to make ahead mixes of dry ingredients for things like muffins
etc. It seems to take some of the labor out of putting together a
batch in a hurry.
Could I successfully do the same with a bread mix? I'd like to make
up batches for my favorite rolls. The ingredients are WW flour, all
purpose flour, salt, sugar and yeast. Will the yeast lose its ummph?
All I'll have to do is add the water, oil and egg. The dry ingr.
would be stored in a ziplock bag in a dark cupboard.
TIA

yeast lasts forever if kept cool and dry so i don't see why this wouldn't
work... imho the flour would go old before the yeast... if i am wrong some
more knowing soul will say, Lee

Could the flour going old be my problem in the thread Help ABM users? It
expired very early this year, the dried yeast was fresh this month.

Yes, it could be. I don't remember seeing an expiration date on a bag
of flour, just the production date. White flour is said to be good
for 2 years beyond production date. (under good conditions of cool
and dry) I have used flour that was beyond date and it didn't make
satisfactory bread. You see, I didn't believe that the age would
affect the bread noticeably -- now I know better. It definitely
affects the rise.
I wouldn't put yeast in the pre-made bread mix. We go to some effort
to protect our yeast by keeping it in air tight jars in the
refrigerator and freezer. I would think that putting it in a mix
would jeopardize the yeast strength.

i wouldn't think so, i am wondering if you have yeast suitable for an bread
machine, some yeasts don't work as well because they aren't fast acting
enough. Lee
