Funny thing, I read about this bakery in The Guardian some time ago. The
political aspect didn't come through in it. But I was very interested in its
Co-op nature, coupled with the fact that customers subscribed to differing
breads on a specific schedule. What a great model for ensuring a steady
production schedule. And the way that they trained people in the bakery
profession, and their model.

It was always my intention that when we finally got moved over to England to
head on up to Yorkshire, and learn more about them. (Since riding on UK
trains is also one of my other passions, I would ride the train into
Slaithwaite.)

I went again to their products page to re-read their products. I was again
struck how the left side were breads with commercial yeast, while the right
side was all sourdough. I have spent the last five years making the switch
from all commercial yeast to all sourdough. So, from baguettes to bagels;
and from pretzels to boules, I have gone all sourdough.

I guess I don't understand why they don't go all sourdough, or not.

Ahhhhh Yorkshire! God's own county:)) Are you in UK now?

The steam trains are wonderful and my favourite is the one from Pickering to
Whitby. I always get off for a bit at Goathland:) Did you ever watch
Heatbeat? TV programme. Aidensfield = Goathland

Nope. Still in Seattle. First the economy tanked; and not a good time to
sell or rent out. Then a bit of under the weather this year. So, we have
been put off until next year. Will be moving to Devon. Have ridden the steam
trains in Cornwall. Seems I never got over riding the steam trains of my
youth in New Jersey. But will plan on taking the trains in Yorkshire.

Yes, well.

The Guardian is a haven for the chattering classes to talk what I
have termed, in the past, "Neo-arcadian bullsh*t" about food.

Yes bread is tightly interwoven into our society, language and food
preferences.

Yes bread is a lifetime's study.

But the kind of co-operative effort so beloved of the leftward leaning
wishy-washy socialist food commentators seldom or never spreads
widely, affects only the chattering classes' buying patterns in the
long term and nearly always ends up relying on a very few committed
individuals.

On the other hand, I do understand that they produce a quality bread, which
is not always a doable thing out in the remote parts.
