This is an excellent article (it's short) and I don't believe it is
too complicated for even a novice bread baker to understand.

Thanks for the link !
However, it confirms that Electrolux and Zojirushi don't use
the same name for the same type of yeast...
So, I will try to get "Levure de Boulangerie Action Express"
to be used when FAST is needed;
and use "Levure du Boulanger Briochin" when normal rising is needed !
