Ever wondered what was in those yeast granules? Got this from the Real Bread
Campaign, 2 years old but I don't suppose much has changed.

McDougalls Fast Action Bread Yeast
Dried Yeast (93%), Calcium Sulphate, Flour Treatment Agents: Ascorbic Acid,
Alpha Amylase; Emulsifier: Sorbitan Monostearate.

Allinson Easy Bake Yeast
Yeast, Emulsifier: E491, Flour Treatment Agent: Ascorbic Acid (Vitamin C)

Doves Farm Quick Yeast
Yeast, Rehydrating Agent (Sorbitan Monostearate)

Hovis Fast Action Bread Yeast
Dried Yeast (92%), Emulsifier (sorbitan Monostearate; Calcium Sulphate),
Flour Treatment Agents (ascorbic Acid), Enzymes.

Sainsbury's Fast Action Dried Yeast
Dried Yeast (93%), Calcium Sulphate, Flour Treatment Agents (ascorbic Acid,

Just to clarify afaict the yeast sold as 'Dried Active Yeast' the type which
is in bigger granules and needs ten minutes soaking has no additives at all.

Well Tim the components are obvious...aside from the known hydrating
agent whichis sorbitan monostearate it also contains materials used
for bread improvers such as:
Ascorbic acid, MIneral yeast food in the form of calcium sulfate,
fungal enzymes which works like diastatic malt.

These enhanced dry yeasts being marketed are designed to perform
robustly for hobbyist and homebakers that have difficulty in
procuring, and measuring precise quantities of functional
ingredients like ascorbic acid,amylaze and mineral salt for improved
baking performance...of their home bread recipes..

Yeah it doesn't amount to very much and the quantities are small. Not
anything to be concerned about unless you have a real issue with additives,
but that in itself is worth knowing.
