The bagels I made recently were such a hit but the high protein flour was
very expensive in comparison to the noname unbleached allpurpose flour I
buy....$6 for 10kg of noname (Loblaws) allpurpose 11.52% protein; $3.50
for 2.5kg of RobinHood "best for bread" (probably bleached because it
doesn't say it isn't) 13.1%protein.

Not only would I like to get strong flour at a reasonable price but I
would like it if it were unbleached.

Does anyone know where to go in the Toronto area to get unbleached high
gluten flour at a reasonable price?

Take a look in the yellow pages under restaurant supplies and look for a
food service company. There are several in my area that will sell to the
public.

I buy a 20 Kg sack of Robin Hood Bakers flour from Costco, price last
purchase was $12.99.

It's a brown paper sack, and say's Robin Hood, Bakers flour on it.
When I have looked up the Robin Hood site I can find nothing about it.
I use it for all my white breads, my pastry and cake making, have even make
genoise sponge with it and
had no problems.
But it is NOT unbleached,,,,,,,,,,,,,, qahtan.

I have a copy of the Bakers Journal that has a directory of all the flour
millers in Canada (and one in the US). It is 9 pages long. I could scan it
and e-mail it to you if you like. You could then contact them and fond out
where their distributors are.
I have tried getting flour from a miller's distributor but they had a 5 bag
minimum and I can't justify buying 100kg of flour!

Many thanks to Allan for this information. Once the snowstorm stops, I'll
look into the Scarborough places. (London will have to wait til spring, I
think.)

I got barley malt syrup at our local health food store (Evergreen Foods).
I don't know if it is Diastatic Malt - all that is on the label is 100%
pure barley malt. I'm afraid I don't recall how much I paid but the syrup
seems fine and bread I have made with it has risen but then there was
plenty of flour for the yeast to feed on.

I suppose it's possible that the Bulk Store on Leslie near the Lakeshore
in Toronto might carry it. But judging from their other prices, it
probably won't be the cheapest that you can get in the area.

The fellow who wrote the following page says you can make your own
diastatic malt:

I buy "Steeplechase Patent flour" it is unbleached, unbromated, enriched
flour. It is a product of canada.

Many bakers use it for rolls etc.

It worked for me as well. I live on London and I get my flour from the Arva
Mills, it is great for bread.

Excuse me for replying to this thread so much later than your reply, rsh.
It has been ages since I've looked into the newsgroup! Last fall, we did a
little price checking at Bulk Barn. The price for unbleached all purpose
flour there works out to about twice the price of the 10kg bags of No-name
unbleached allpurpose (Loblaws). Bulk Barn is just not good value for
large quantities. (The no-name allpurpose is very good for bread making -
but not so good for bagel making.)

I haven't yet tried John Vince. That is pretty far from me - but once the
snow disappears (if it ever disappears) and the temperatures become a
little more reasonable, I'll take a bike ride up there to check it out.
They have high-gluten unbleached flour AND high gluten whole wheat flour
there, rsh? Do you know any prices per kilo off-hand?

Absolutely agree that for LARGE amounts I would not bother with Bulk
Barn. Their prices are NOT the best and unless you cannot find it
somewhere else I do not look there. They do sell 1 pound vacuum packs
of Fleishmann's Yeast that I have not been able to find for a better
price here in Toronto, but otherwise their prices can often be beat IF
you are comparing to no-name. They may, however, be providing a brand
name product and then it may make a difference to you [or not]

Not offhand but they do sell 20 and 40 kilo bags of flours for bakers,
etc., as well as loose in the bins. Feel free to TELEPHONE them to
ask, instead of cycling all the way up. Of course if you take the
subway with your bike on it to the end of the line at Downsview you
have a relatively short bike trip :-) but the choice is yours.

From the JohnVince catalog...
12087 All Purpose Flour Unbleached High Loaf
Farine non blanchie tout usage 40.00 kg bag

What they charge for the 40 kilos I do not know, but that has to be a
relatively low price for 88 pounds of flour...

20 kilos is kind of a lot to carry on a bike... but I see from looking at
their site that they sell 10kilo bags of flour as well. It's a little
surprising that there are no prices listed on the site. It also looks like
it is wholesale only. Or am I misreading something?

and 40 kilos on the back of the bike is out of the question! I'm crazy but
not that crazy! I'll definitely phone first to make sure it's not a wild
goose chase. Although the adventure of finding a way to ride up there and
stay in neighbourhoods or on bikepaths might make it all worth-while. (if
the snow ever disappears)

Have you tried the "wholesale" outlets of Superstore/Loblaws? I bought a
20kg bag of Robin Hood bread flour for less than $10 the other day at one of
these outlets in Calgary. AP was about the same price.

NOT wholesale only... Relatively LARGE retail outlet, IF you go there,
for bulk sale of loose candies, dried fruits, gums, etc. They also
have a small 'sit at the counter' deli in the back, a 'fragrance' area
where they sell fragrances, a fresh veggies for sale area, ethnic
canned goods, the various types of flour they sell in bulk bins where
you can fill your own plastic bags, etc., as well as the larger bags
of flours. They have every kind of Planters Peanut product since they
MAKE the Canadian Planters stuff, as well as all of the factory
rejects from their Planter's plant, which is right next door.

Wholesale covers their shipping via their catalog around the world.
For that you need to open an account, and meet their minimums in
dollar terms every time you order, or you pay extra for shipping
costs. If you go to their location, on Steeprock, you can go in and
simply buy one banana if you want to :-) and if you can avoid spending
a hundred dollars on various candies, dried fruits, etc.

As to how to ride there on a bike, they are just up the road from the
Downsview Subway station, so IF you take your bike on the subway to
there, ride EAST on Sheppard to Wilson Heights [two blocks] and then
NORTH on Wilson Heights to Codsell [two blocks], then east a very
short block to Honiton, then north to Overbrook. Once at Overbrook go
west, and at the light go straight across Dufferin and it becomes
Steeprock. John Vince is on your left after you ride one block past
Dufferin and cross over Lodestar. Not very much traffic on any of the
roads if you go that way. According to Streets and Trips this totals
2.5 kilometers :-) which shouldn't be too much of a stretch on a bike.

Shorter is west on Sheppard across the Allen to the 2nd instance of
Kodiak Crescent on the north side, then right to Whitehorse Road, then
left to Steeprock and then right to John Vince. That is about 1.7
kilometers but with more commercial traffic on the roads. This also
takes you right past the Corningware Outlet store, so if you want any
of their 'baking' supplies, stop in and take a look. A cheap computer
place is in that same strip mall too, selling relatively cheap blank
CDs, DVDs, etc.

Anyway, if you do NOT take the subway to Downsview Station, then you
have to figure out the route that gets you to this general area, and I
do NOT recommend the ups and downs of Bathurst north of Sheppard, or
Sheppard east of Bathurst, etc. so it may be wise to come up Bathurst
to Sheppard, then west to either Wilson Heights if taking the first
route, or to Kodiak Crescent if taking the second route.

Have fun...
