Cadillac 501 ci engine

I'm still trying to come up to speed on my Dads 73' Eldorado. Looking at
the engine heads there seems to be two temperature sensors screwed directly
in to the heads. One is on the right-hand side all the way forward, the
other is on the left-hand side all the way aft. There is a single black
wire coming from the one up front and a green wire coming from the rearward
one. They're not intersecting any oil or coolant passageways that I can
see, so my conclusion is they are measuring the head temperatures directly.
Did Cadillac actually make an engine system this sophisticated back then and
if so how do I tell if it is working? Or am I even on the right page of
music?

THe engine is 500 cubic inches, not 501.
It has two temp sensors.
One comes in at 230 degrees and says engine temp on the dash.
Time to stop some where and see why it's heating up or slow down if
going 100 in the heat with the air on.

The second sensor comes in at 260 degrees and the dash says stop engine.
AND, you better do just that.
The 500 in my estimation is the finest engine ever built.

As I recall they monitor the head temperature and close at 260 F.
An indicator on the dash says STOP ENGINE .
Then you get to let her cool off without assistance.
By the way, that's a 500 cubic inch engine with a 4.3" stroke and 4.3"
bore with 5" piston centers. It is by far the best engine Cadillac ever
built. It is so much more engine than the Chev 454 that the two side by
side make the 454 look like a Ford 60 and yet the Cadillac weighs less.
