I really hate to spoil the fun, but his name really is Albert Cuyp, not
Aelbert. I remember it that way, and two encyclopedias concur (a
digital one and a paper one). If there is any other spelling, neither
mentions it, sorry.

My art book gives his correct Dutch name as "Albert Cuijp", and says
it can be written "Cuyp". This is because pronouncing the correct
"Cuijp" is difficult for all others except the Dutch?

Probably, Mo. We accept Osama\Usama variations and with 1250 Google hits
Aelbert Cuyp is certainly well-known enough for this version to be
acceptable.

No, it's just that 'ij' is a standard ligature[*] in Dutch, and in
the past has often been written as 'y'. Anyway, normally it's just a
vowel, but the 'uy' (or 'uij') is pronounced as a different single
vowel, which in modern Dutch is spelled simply as 'ui'.

There's no really close English equivalent, and most native English
speakers will pronounce Cuyp as 'coip', which sounds horribly wrong
to Dutch ears, but it's probably as close as you can get just using
English phonemes. 'Cipe' would be a close second, and something between
the two would be closer still.

[*] The rule is even that if a word starts with 'ij', and you want
to capitalize that word, both the 'i' and 'j' must be written as
capitals. So 'ijs' (meaning 'ice') has to become 'IJs'.

How about this one in ENT and the other one in NAME, Janet?

I quite like Cuyp's work, but my favourite Dutch landscape artist is
Jacob van Ruisdel.
