I home roast and have settled on what I like in my espresso machine.
One of the parts, 1/6 of my usual batch, is an Aged Sumatra I buy from
Sweet Marias.
Except that now they're out of it and don't have an ETA for more.
I was wondering how one ages green coffee beans - do you just let them
"sit around" in an appropriate temperature and humidity, e.g., my
house?
