The batch just roasted and they are only there for a week or so. The green are in the original, foil bag until they are gone.

I was just thinking that the oils from the beans must get all over in there. I know when I dump mine for cooling, the pan I use gets all oily.
The thing that comes to mind is a friend of mine who has designed some roasters and one of the issues he ran into was oil contamination in the roaster during the roasting process. He had to figure out how to clean it out so the taste was the best roast to roast.

Personally I store my green beans in burlap in a cool dry place and the roasted beans either go straight into the grinder (my grinder holds a couple lbs of beans) or into a sealed glass jar (old flip lid style) for storage. Of course the cooling process in my roasting IS dumping them out of the roaster for cooling.


Have you cleaned your roaster? Curious on if you have done a taste comparison of a before roast and after roast after cleaning? I did that once on an espresso machine. I let it go a while without cleaning and then did a taste test before and after and I DID notice a difference. I keep it clean now... (did the same thing with my grinder...)

Hi,

I'm not roasting them that dark ... or at least so dark that I see
oils. I keep the temperatures as low as possible and let it just get
into the second crack. Some smoke escapes but we're not seeing the
shiny, oil glistening beans of the past (opps, mistakes.)

I haven't cleaned the cage, yet, as there is no evidence of
accumulation. But I don't relish the thought. The wire-mesh cylinder
has some metal 'paddles' that cause some shifting of the beans around
during each rotation. My hand will not reach in so any jammed beans
have to be ... noodled out with a pointy object. Cleaning the outside
is easy, the inside will not be fun.

Right now, I'm thinking if I do, I'll leave it in the 'big oven'
during an over-night, self-cleaning cycle. That should get it hot
enough to char any organics and a quick wash should take care of the
ash.
