I have been developing for some time a small puck that's preloaded with a given flavor (e.g. ginger, chocolate, etc.).
The puck is placed at the bottom of the portafilter before the ground coffee is poured and pressed. They pucks work OK. I have been working on increasing flavor loading %.
How you baristas feel about using such system for adding flavor to the coffee? (compared to syrups and other flavorings)....
The nice thing is that the flavor is brewed into the coffee and not just mixed in as a post-process. It is also less sugary (as compared to syrups).
