Speaking from my non-Meshroom photogrammetry experience, your models can be very accurate. You'd need a large enough space for your subject to stand in a position they can hold long enough for the photos to be taken with some known measurement on the floor (or wherever). I'd probably tape of a 10 foot length on the floor.
Then you should consider taking 3 "rings" of photos at different heights of the subject - maybe 2.5 feet off the ground, 5 feet and 7 feet.
You should have your camera set to manual mode and use a small aperture - I'd say the smallest I'd go would be f/5.6 and ideally something more like f/7 so your subject is in focus all the way through. If you don't have lots of lighting, might require a tripod.
Then, each ring should be shot using something like 10-15 degrees between each camera position. So 360/10 would be 36 shots per ring.
Remember that each step introduces slop so the tighter you can keep each shot to 1005 perfection (which is impossible) the better the final result.
