I would like to track the amount of hours a task is originally
estimated when we have our planning estimation along with the
remaining time, but I can't see a way to do this in Agilo.

We are using remaining time correctly but looking back over a sprint
afterwards, I have no way of knowing how big (in time) the original
value was apart from checking what "Remaining time" was first set to
in the comments.

Ideally, I would like to historically track the number of hours
assigned to the sprint at start time either on a task or story level.

Is there any way I can do this?

Thanks,

Andy.

Yes, there is no automated way to do this.

You can, but only for the whole sprint, by looking at the burndown chart.

From a Scrum perspective, what value would this give you?

Cheers

I added new fields "Estimated time" and "Spent time" to Agilo.
Initially, "Estimated time" equals "Remaining time".
"Estimated time" isn't changed during sprint.
"Spent time" is also manually entered where developers adds time spent on particular task.

There are couple of plugins that may be used here:
  1. http://trac-hacks.org/wiki/AgiloTicketReportPlugin
  2. http://trac-hacks.org/wiki/TimingAndEstimationPlugin
  3. http://trac-hacks.org/wiki/TracHoursPlugin
For us, it turned it is easiest to manually add necessary columns and use inline editing in Sprint Backlog for administration of estimated, remaining and spent time.
