The answer to your question is easy if we can have sufficient, regular and affordable
Electricity; electricity; electricity--as without it it is difficult to preserve any food for a long period of lifewith the exception--of those who live in very cold places --including near the arctic and antarctic regionswho can take the advantage of the prolonged cold climate to preserve meat, fish and other food productsduring the hunting and fishing seasons.
One can also use salt to preserve some food items--but this will not work for yam.
The best method to preserve yam that I have heard about is to peel and slice and then freeze the slicesuntil needed!
But you'll need regular affordable electrical energy to freeze any kind of food inNigeria or any other tropical region of the world.
Nigeria will remain a permanent member of the third world until we solve the problemof insufficient electrical energy supply. If we are not careful, and at the rate at which weare over-producing babies we can not afford to care for we might end up being demotedto 4th World!

Baba Steve - you sound like a typical Nigerian /African academician - to them, a problem is always unsolvable until others looked into it and solve it. And the Nigerian /African academician will become an expert at explaining how others solved the problem not how he/she can use the process used by others in solving the problems affecting his/her community/people.
I am not in the field of science and therefore cannot help but invest in making it (solving the problem of making yams last longer) happen.
On my end, I am working on solving the problem of people dying while living alone without friends and family knowing for days or weeks that they are gone. It is huge problem, prevalent all over the world that they coined a word for it in Japan, “Kodokushi”.
