Hello AC Travelers; Hope the trip home was short And safe. It was a great visit; We really enjoyed it. I’ll be getting back to you later after I check the Hockey schedule and availability. Here is the recipe for the “Gouton” : Bring to a boil, all together in a large pot, (5/7 Quarts of water),5/6 large white onions finely chopped,; # 3 lg tablespoons (tbls) of Cinnamon, 3 lg tbls of Allspice, 3 tbls of Ground Cloves, 2 tbls of nutmeg, --and 3 lbs of ground pork, ½ lb of ground beef.. After reaching boiling , then simmer, cover and stir frequently for 6 hours, -- (8 optimum It tastes better). Add water as needed so it will barely churns and won’t burn… It will have a lot of grease on top; so after cooking time – either spoon off or pour off as much of the top grease as you can; … let it cool a bit -- then put in small in containers for freezing. If their in any residual white grease on top of the containers after it cools.. just spoon of the access. It should be pasty , like pate, for serving and be the color of brown/grayish Hamburg..:
