Hello Smail, 

You can get Sentinel Data for free but I have not tried to process it with ADORE yet. After writing a small (~1 page) proposal you can also get access to ENVISAT and ERS archive which you can process with ADORE. 

Which software is best? That depends on your previous experience, if you have people using a particular software in your institution etc. If licensing is not a problem, I suggest ISCE (http://winsar.unavco.org/isce.html)  instead of Roi-Pac. I think ADORE-DORIS is slightly easier than DORIS but some see it as an extra layer of complication. I consider STAMPS in a different category, it is not a software you would like to use a single interferogram, but something to generate a series of interferograms and time series. If you look into GIAnT and would like to use it, ADORE-DORIS has it integrated, so it is somewhat easy to use. If you want to use STAMPS/time series, you will use it on its own... 

For installation help, I suggest the mailing lists for relevant software. ADORE-DORIS is relatively easy to install thanks to Antonio Valentino's packages on Ubuntu. It might not be the latest version though... You might need to run "check updates" in ADORE Doris after install. There is also a Ubuntu DVD that comes with ADORE DORIS pre-installed. 

I know ISCE has a VAGRANT installer, you might want to ask about that on their mailing list. 

What conditions for data selection? That depends where you are working (urban, rural), how fast/slow the expected deformation is, and what technique (PSI, or SBAS) you are planning to use.

softwares but they are very difficult to install them, I hope you help me to install and use the best.
