Is anyone aware of the existence of math symbols in italic font for use in illustrator 10 with OSX?

Yes. Math italic symbols are available from Adobe in the Lucida math fonts.

What particular math symbols do you need? Are they in standard Mac fonts?

If not, the "Symbol" font does not have an italic version. You could slant the letters about 10 degrees to simulate an italic, if you wanted.

By math fonts I meant Greek letters like alpha, beta,..
How can I slant the letters by 10 degrees?

There are many Greek fonts that have italics and Adobe's OpenType Pro fonts (like Minion Pro) include Greek glyphs and have italic variants.

I repeat, these italic greek characters are in the Lucida Math family. The sample in the Adobe store does not show them, but the characters are based on those used in the TeX language for setting math.
