For some fonts such as the True Type Castellar, Photoshop renders them as being solid rather than open. How can I correct this?

Replace it with the latest version of the font. Quite possible you are using an outdated older version that contains some flaws which throw PS off track. in addition, check your document DPI settings and antialiasing mode in relation to the actual font size. You may simply be using a very small font size at an odd raster.

Thank you Mylenium. I had checker earlier and the font worked correctly with Illustrator. Then I went back to Photoshop and lo and behold it is now working correctly!
