Hey, I too thought "Workspace" is in my "Window" menu. But how come I
don't have such. I can't find it anywhere?

I have:

Window | Workspace | Reset Palette Locations

in *Photoshop*. No such thing in Illustrator.

Maybe you want to reset all your preferences. So search for "aiprefs" on
your HD. Rename (f.e. aiprefs_backup) or delete it. Start AI and you've got
the prefrences like a new installation.

I had to find this. I am doing a book for Ill CS2 "Classroom in a Book"
and each lesson it would say to restore defaults.

I couldn't find this in where I thought it was (C>Program Files> Adobe,
etc)

When I did find it, I made a shortcut to it:

C:\Documents and Settings\Carrie\Application Data\Adobe\Adobe Illustrator
CS2 Settings (of course, yours would have your name in it and not mine)

It has the aiprefs file you have to delete or rename (deleting is easier,
unless you think you might want to go back to it sometimes) and it makes
another one when you open the program again. I was wary of doing this the
first time, so I drapped the file onto the desktop, and openned Illustrator
and it apparently worked.

I'm so new at Illustrator (and sometimes give up on it, or skip on to
something else) I'm also wary of answering questions others have about it.
But, I think this might be what you are asking about? Changing it back to
default settings, which the tutorials I'm doing say to do each time. Even
though I'm not sure that I changed anything FROM the default settings in the
first place. I see someone else answered, but (for myself) I had a hard time
FINDING the aiprefs file the first time. It wasn't where I thought it would
be.

If you can't find the aipref file on your setup, you can put it in FIND
and see where it is.

Whoops!! Seems the OP is new to Illy ... guess everyone's not as bright as
you are nor as expert with Illy as you are!!

Oh, wait ... you're the one asking for help with the Mesh tool, aren't you?
Expert? Guess I have you mixed up with someone else! ;)

The way to do this in 2017 with CS6 is:

Windows>Workspace

Then disable all, in my case it was essentials...
