Convert Site to XHTML?

Hi. I'm reviving and older site I created in GoLive 6 now using GoLive CS2. Should I convert my pages to XHMTL, and if so should I have GoLive write xml version="1.0" encoding="iso-8859-1" at the top?

The website is a standard company website with the pages having a PHP extension, each page containing tables, text, images, CSS, PHP includes, etc.

Not really, unless you have a need to do so, or you want the challenge of
working within the stricter XHTML syntax. It's quite safe to stick with
HTML 4.01 Transitional/Strict, depending on your coding skill level.
