Can you fully edit pdf files in Adobe Acrobat Writer as you can with Word?

No.

As in add whole paragraphs of text with the same fonts and format?

No.

This kind of editing needs to be done with the source document/application.

In addition, there is no product Adobe Acrobat Writer. There used to be PDFWriter that was part of Acrobat. It is no longer available. Acrobat is probably what you are talking about (and what this forum is about). Acrobat is not an editor, but a product to create a final presentation form, with minor editing features. Major editing should ALWAYS be done in the original document (DO NOT toss it after you create the PDF).
