When you change your domain's email to come to Microsoft 365, by updating your domain's MX record during setup, ALL email sent to that domain will start coming to Microsoft 365. Make sure you've added users and created mailboxes in Microsoft 365 for everyone who has email on your domain BEFORE you change the MX record. For instance, when Outlook.com got migrated to its Microsoft 365 Exchange Online hosting platform, accounts that had an @outlook address as their primary address in general got migrated earlier than ones that had a legacy address as the primary address.
Therefore, you may want to consider switching to an @outlook address or at least already register an additional @outlook address for your current @hotmail mailbox (or any other legacy address you may have).
No, by default you'll continue to send out with your original email address. You can manually select your new @outlook email address when sending a message or configure it to be your new default (see further below).
To get rid of these remnants, you can re-add your Outlook.com account as an Exchange account to Outlook via Auto Account Setup. All you'd have to do is specify your name, email address and password (or App Password when you are using Two-Step Verification in an older Outlook version) and Outlook will configure your Outlook.com account by itself.
GitHub uses your commit email address to associate commits with your account on GitHub.com. You can choose the email address that will be associated with the commits you push from the command line as well as web-based Git operations you make.

If you haven't enabled email address privacy, you can choose which verified email address to author changes with when you edit, delete, or create files or merge a pull request on GitHub. If you enabled email address privacy, then the commit author email address cannot be changed and will be a no-reply by default. You can use the git config command to change the email address you associate with your Git commits. The new email address you set will be visible in any future commits you push to GitHub.com from the command line. Students must check their UTSA email accounts regularly (daily is suggested), and not having seen an important UTSA email message from a faculty member other University administrator or administrative office is not accepted as an excuse for failure to take an important action.

yahoo.com, etc.) do so at their own risk and the university is not responsible for the privacy and security practices handled by outside email vendors. Additionally, UTSA offices, staff or faculty will not be able to respond with detailed or sensitive information about the student to any non-utsa email address.
As of October 4, 2021, UTSA discontinued the preferred email address option and all email communications will be sent to the utsa-issued @
