Professor, uma dúvida, só será considerado vento de proa ou de cauda
se a diferença entre a direção do vento e o rumo que a aeronave está
mantendo for exatamento 90graus e/ou maior que 90 graus ?

Caso seja maior, o vento será de cauda.

Então, se uma aeronave está mantendo 335 graus, e um vento de
195graus, é vento de cauda ? Maior que 90 graus de diferença será
sempre de cauda nesse caso ?

Se a proa da aeronave é 335, 90 graus a mais será 065 e 90 graus a menos será 245.
Se a direção do vento for maior que 065 e menor que 245, então existirá uma componente de cauda.

Andrews, dependedo da intencidade do vento (pelo menos no que eu analizei no computador de bordo) um vento perpendicular a uma aeronave (90º) não será de tranvés e sim de proa, pelo fato de estar diminuindo a velocidade aerodinâmica da aeronave.
