Ground Beef

I received an interesting email from John today about ground beef and
thought I'd share it with the A2G group:

Tom,

You had asked me about "ground" products after watching Jamie Oliver
demonstrate how chicken nuggets are made.

I can't really comment on poultry products, but I did check on the
ground beef from Grass Fed Cattle Company. I spoke to Abby and she was
sure it was made only from meat and "trim" (polite way of saying
"fat"). She investigated for me and reports that in their product
there is definitely nothing else. She said that some customers do want
heart meat in their ground beef but that it must be specifically
requested, no organ meats or other odds and ends go into the ground
beef. They were very clear that they take great care to insure the
ground beef is only meat and trim.

I remain confident that Grass Fed Cattle Company's products are the
highest quality beef we can buy here in Minnesota (and the prices
really do beat other high quality local sources for reasonably
comparable products).

I intend to continue doing business with Grass Fed Cattle Company
because I believe a *small* amount of grass fed meat is actually
healthy in our diet (I personally consume a bit less than one pound of
beef per week).
