HOW DO YOU STORE BLACK GARLIC??

 I made black garlic, and initially, before refigerating them, the cloves were black and soft and easy to consume.
Instructions said, to place heads of the black garlic, in a ziploc bag, and place in frig to store. After about 3 days, I tried a clove, it was hard and difficult to chew.
HELP.
