I'm happy to stumble acros this group. I already see some things that I'm going to follow up on.
I've been fermenting things for well over a decade (lacto-fermented beets with garlic and cloves is my favorite recipe). I'm also a potter. I recently put the two together and started making handmade ceramic fermentation crocks. Each one is unique, I don't throw to a pattern and probably can't make more than one or two a month.
