Bamboo shoots

Does anyone have experience with fermenting bamboo shoots?

I'd like to try a spicy ferment and I'm thinking of either:
Add to my regular kim chi batch (instead of say, daikon radish), or
attempt a bamboo shoot ferment in a kim chi-style paste.

Any suggestions? Tips?

Your ideas sound good....  They might also be good in a mixed veg ferment :)
