The radio N7500 is single receiving with a clever app that can switch and transmit on 2 memory channels.

It can scan your memory channels.

If you have not read the help documents for this radio I would suggest have a look.

The app does take some understanding but not knowing what your using I would suggest you do some bedtime reading.

I am sorry it says absolutely nothing in the manual about dual channel setup. Can please be more specific as to where in the documentation this is explained.

The radio is a single vfo radio that switches easily between the memory channels you have selected in the 2 channels.
It will sit on the last channel when it hears something.

Here was one of my problems:

When I select dual CH,  it shows the channel I am presently on and Channel 1.  I want to change to channel 2 instead of 1. How do I do this?

Just figured this out If you press and hold the channel in the window that displays the two channels you can change to a different channel. 

Does Dual CH monitor for activity on both channels?

If you have dual channel selected it will monitor both. It can only monitor one at a time. It 1 is in use  and there is a station on the it will not switch to 2 unit 1 is silent and there is action on 2. 
Use that app to select the other channel on the map screen.
