I think their secret is vast worm composting and keeping hold of all
the cities' compost to feed the worms with. Also the vast reaches of
Chicago - this guy used the design for small urban lots, previously
posted link.

I still want to keep the rural stretches rural, but making things grow
in the urban center will make for less stress out of town.
