4 cups cooked Maine lobster meat, cut into bite-size pieces
1/2 cup mayonnaise
1/4 cup chopped scallions
2 tablespoons chopped celery
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon dried tarragon
4 hot dog buns, lightly toasted
4 crisp lettuce leaves, optional
In a large mixing bowl, mix together all the ingredients except the
buns and lettuce leaves. Place about � cup mixture on each hot dog
bun. We also like to top each with a crisp lettuce leaf. Makes 4
servings.
