1 pound fish fillets or steaks (3/4 to 1 1/2 inches thick) such as cod
or halibut, cut into serving-size pieces
2 tablespoons cornmeal
2 tablespoons flour
1/4 teaspoon paprika
Dash of salt
Dash of pepper
1 tablespoon oil
1 tablespoon grated Parmesan cheese
Preheat oven to 425 degrees.
Pat fish dry with paper towels.
Combine cornmeal, flour, paprika, salt and pepper in flat dish.
Place oil in baking dish and heat in oven for 1 minute.
Dredge fish in cornmeal mixture.
Shake off excess.
Place in 13 x 9-inch baking dish and turn to coat with oil.
Arrange fish pieces 1 inch apart.
Sprinkle with Parmesan cheese.
Bake in preheated oven, allowing 10 minutes per inch thickness, measured
at thickest part.
When done, fish should flake when tested with a fork.
