Yam Casserole
3 16-oz. cans yams, drained and mashed
1/2 cup butter or margarine, melted
1/2 cup firmly packed light brown sugar
1 tsp. salt
1/2 tsp. ground nutmeg or to taste
1 tsp. cinnamon or to taste
1/2 cup milk
3/4 cup chopped pecans
small marshmallows for garnish (or halved regular sized marshmallows)
Beat yams, butter, sugar and seasonings together in large bowl
until fluffy. Stir in other ingredients (minus the marshmallows) and
turn into a 1-quart baking dish. Bake at 350˚ for 35 minutes.
Arrange marshmallows on top and bake 5 minutes longer. Makes six
servings.
